Och jul. Och midsommar. Festlig helgmat helt enkelt. F\u00f6r enkelt \u00e4r det. N\u00e5gra f\u00e5 ingredienser och en tidsm\u00e4ssig insats p\u00e5 kanske tio minuter. Sedan sk\u00f6ter den sig sj\u00e4lv. En v\u00e4lkommen egenskap n\u00e4r det \u00e4r mycket att fixa \u00e4nd\u00e5.<\/strong><\/p>\n<p>Gravad betydde precis det. Fisk saltades och sedan gr\u00e4vde man ner den. D\u00e4rnere kom en syrningsprocess ig\u00e5ng och jag t\u00e4nker att resultatet kanske inte \u00e4r det man helst vill presentera p\u00e5 p\u00e5skbordet. Vet inte s\u00e4kert, men jag l\u00e4mnar den forna laxen d\u00e4r i gropen och g\u00e5r vidare.<\/p>\n<p>Idag menar vi sockersaltat n\u00e4r vi talar gravat. Och det \u00e4r smak och konsistens i fokus inte konservering. Man kan ge sig p\u00e5 olika slags fiskar, men jag tycker att de feta blir b\u00e4st. Konsistensen p\u00e5 mager, gravad fisk kan bli torr och h\u00e5rd. I alla fall om man torrsaltar som vi ska idag. Till det h\u00e4r receptet k\u00f6r vi p\u00e5 lax. Odlad eller Atlantf\u00e5ngad.<\/p>\n<p>I m\u00e5nga recept ska tv\u00e5 j\u00e4mntjocka laxfil\u00e9er l\u00e4ggas mot varandra med salt, socker och kryddor i mitten. Jag \u00e4r slarvigare och kan inte m\u00e4rka n\u00e5gon skillnad. I alla fall inte n\u00e4r man som h\u00e4r l\u00e4gger till en fuktig ingrediens. Jag gravade en enkel stj\u00e4rtbit och det blev kanonbra.<\/p>\n<p>Och gravlaxs\u00e5s? Nix, inte idag. K\u00e4nde f\u00f6r n\u00e5got friskare och v\u00e5rigare. Det fick bli en sorts sallad, eller r\u00f6ra, eller sallad? Inneh\u00e5llet \u00e4r i alla fall f\u00e4rsk f\u00e4nk\u00e5l, gr\u00f6nt \u00e4pple, pepparrot och creme fraiche. Gott , krispigt och kr\u00e4migt.<\/p>\n<p>Annars \u00e4r gravningen i grunden klassisk, men med ett till\u00e4gg som liksom g\u00f6r hela grejen. Fr\u00e4sch sallad p\u00e5 \u00e4pple, f\u00e4nk\u00e5l och pepparrot till.<\/figcaption><\/figure>\n<h2>R\u00f6dbetsgravad lax (8 pers)<\/h2>\n<ul>\n<li>1 kg lax<\/li>\n<li>3 msk socker<\/li>\n<li>3 msk salt<\/li>\n<li>1 r\u00f6dbeta<\/li>\n<\/ul>\n<h2>F\u00e4nk\u00e5ls- och \u00e4ppelsallad<\/h2>\n<ul>\n<li>2 st f\u00e4nk\u00e5lskn\u00f6lar<\/li>\n<li>2 gr\u00f6nt \u00e4pple<\/li>\n<li>1 msk citron<\/li>\n<li>2 dl creme fraiche<\/li>\n<li>2 \u00a0tsk dijonsenap<\/li>\n<li>f\u00e4rsk pepparrot<\/li>\n<li>salt<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Putsa laxen och kontrollera att inga ben sitter kvar. Blanda socker och salt och klappa in det p\u00e5 laxens k\u00f6ttsida. Sk\u00f6lj r\u00f6dbetan och skala den noga. Riv den grovt och f\u00f6rdela rivet \u00f6ver fisken.<\/li>\n<li>L\u00e4gg i plastp\u00e5se och knyt ordentligt. Plastp\u00e5sen ska vara s\u00e5 stor att laxen kan ligga platt. L\u00e4gg i kyl och v\u00e4nd p\u00e5sen n\u00e5gra g\u00e5ngen under gravningen. L\u00e5t ligga ett och ett halvt, eller h\u00f6gst tv\u00e5 dygn. Ligger den l\u00e4ngre kan den bli h\u00e5rd.<\/li>\n<li>Vid servering sk\u00e4r man tunna, tunna skivor som blir sprakande vackert upplagt p\u00e5 tallrik.<\/li>\n<li>Halvera f\u00e5nk\u00e5len och ta tillvara p\u00e5 de dilliknande bladen. Sk\u00e4r sedan f\u00e4nk\u00e5len tunt, eventuellt med hj\u00e4lp av en mandolin. Samma sak med \u00e4pplet. Droppa citron \u00f6ver \u00e4ppelskivorna s\u00e5 att de beh\u00e5ller f\u00e4rgen.<\/li>\n<li>R\u00f6r ihop creme fraiche och senap innan f\u00e4nk\u00e5l och \u00e4pple blandas i. Blanda i riven f\u00e4rsk pepparrot. M\u00e4ngden avg\u00f6rs av styrkan. Ibland \u00e4r pepparrot riktigt het, ibland mildare. Men ett par matskedar \u00e4r ett ungef\u00e4rligt m\u00e5tt p\u00e5 lagom. Smaka \u00a0av med salt.och plocka till sist \u00f6ver f\u00e4nk\u00e5lsdillen.<\/li>\n<\/ol>\n<p>Gravat beh\u00f6ver inte bara betyda fisk.
