V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>L\u00e5t oss b\u00f6rja med f\u00f6nstersk\u00f6rden. Allts\u00e5 den som har minsta gnutta l\u00e4ngtan efter att s\u00e5 och sk\u00f6rda m\u00e5ste prova. S\u00e5 enkelt med stor utdelning.<\/p>\n<p>Vanliga gula, torra \u00e4rtor. Kanske har du hemma? Jag lovar att det funkar.<\/p>\n<p>Viktigt med all risotto \u00e4r att det \u00e4r br\u00e5ttom mellan spis och servering. F\u00e5r den v\u00e4nta blir den snabbt stabbig. Nej, l\u00e5t det g\u00e5 undan och servera n\u00e4r den fortfarande \u00e4r varm och lite rinnig i konsistensen.<\/p>\n<p>Smaks\u00e4tter g\u00f6r vi med lagrad svensk ost och sm\u00f6r. S\u00e5 in i norden gott!<\/p>\n<h2>\u00c4rtrisotto<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>8 \u2013 9 dl gr\u00f6nsaks- eller h\u00f6nsbuljong<\/li>\n<li>2 schalottenl\u00f6kar<\/li>\n<li>3 dl gr\u00f6tris<\/li>\n<li>1 \u00bd dl vitt vin<\/li>\n<li>3 dl gr\u00f6na \u00e4rtor<\/li>\n<li>25 g sm\u00f6r<\/li>\n<li>2 dl riven v\u00e4sterbottens- eller pr\u00e4stost<\/li>\n<\/ul>\n<h4><strong>P\u00e5 toppen<\/strong><\/h4>\n<ul>\n<li>100 g sm\u00f6rfr\u00e4sta \u00e4rtskott<\/li>\n<li>hyvlad ost<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Koka upp buljongen och l\u00e5t den sm\u00e5sjuda p\u00e5 spisen.<\/li>\n<li>Hacka schalottenl\u00f6ken mycket fint. V\u00e4rm olja i en tjockbottnad kastrull och svetta l\u00f6ken utan att den f\u00e5r f\u00e4rg. L\u00e4gg i riset och l\u00e5t det fr\u00e4sa med ett par minuter. H\u00e4ll p\u00e5 vinet och l\u00e5t riset absorbera det under tiden som du r\u00f6r i kastrullen.<\/li>\n<li>Forts\u00e4tt att tillf\u00f6ra het buljong, ett par dl i taget. R\u00f6r regelbundet och fyll p\u00e5 mer n\u00e4r v\u00e4tskan kokat in. R\u00e4kna med att riset \u00e4r klart med en liten k\u00e4rna i mitten efter 18 \u2013 20 minuter. Det f\u00e4rdiga riset ska vara l\u00f6st, n\u00e4stan rinnigt i konsistensen.<\/li>\n<li>\u00c4rtorna l\u00e4ggs i kokande vatten, h\u00e4lls av och mixas hastigt med sm\u00f6r. R\u00f6r i \u00e4rtblandningen och den rivna osten. H\u00e4ll genast upp p\u00e5 fat och toppa med fr\u00e4sta \u00e4rtskott.
