Jag har hoppat p\u00e5 och bjuder p\u00e5 en av mina favoriter, flammkuchen. En variant av det \u00e4lskade mat-p\u00e5-br\u00f6d-temat. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>H\u00e4r har ni ett k\u00e4rt barn som v\u00e5rdas i olika l\u00e4nder med lite variation och under olika namn. Ni som \u00e4r bekanta med en pizza bianco eller en tarte flambee vet precis.<\/p>\n<p>Alla \u00e4r de ljusa med en pizzalik br\u00f6dbotten toppade med n\u00e5gon form av ost. P\u00e5 en flammkuchen hittar man oftast ett och samma p\u00e5l\u00e4gg. Det h\u00e4r \u00e4r rej\u00e4l mat med smak av l\u00f6k och fl\u00e4sk, men det betyder inte alls att den \u00e4r grovhuggen.<\/p>\n<p>Nygr\u00e4ddad, serverad med en krispig sallad \u00e4r det h\u00e4r en r\u00e4tt som platsar vid m\u00e5nga tillf\u00e4llen. Funkar som drinks\u00e4llskap, perfekt som utegrillk\u00e4k, framf\u00f6r tv:n och p\u00e5 middagsbordet. Kan dessutom tas med kall p\u00e5 utflykt. Och l\u00e5t en tanke flyga in i framtiden, till tr\u00e4ngseln runt ett buff\u00e9bord med en tronande flammkuchen. Jod\u00e5, vi kommer dit.<\/p>\n<p>Min variant av flammkuchen skiljer sig lite fr\u00e5n m\u00e5nga andra. Traditionen s\u00e4ger att det ska vara en riktigt tunn botten. Jag g\u00f6r min p\u00e5 egen, l\u00e5ngj\u00e4st pizzadeg som kavlas och blir lite tjockare. <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/pizzadeg\/\">Receptet har du i l\u00e4nken h\u00e4r.<\/a><\/p>\n<p>Det enda trixiga med den \u00e4r att den beh\u00f6ver tid. Det beh\u00f6vs allts\u00e5 en viss framf\u00f6rh\u00e5llning. Jag kallj\u00e4ste degen \u00f6ver natten. Tog fram p\u00e5 morgonen och formade tv\u00e5 fina, runda degbollar som sedan fick forts\u00e4tta j\u00e4sa i kyl tills det var dags att baka ut.<\/p>\n<p>M\u00e5nga sk\u00e4r l\u00f6k och r\u00f6kt fl\u00e4sk direkt \u00f6ver degbotten och ost, men jag startar med att karamellisera l\u00f6ken i panna. Fl\u00e4sket steks knaprigt och f\u00e5r rinna av p\u00e5 papper innan det \u00e4r dags att gr\u00e4dda i ugnen. Det \u00e4r lite mer jobb, men v\u00e4l v\u00e4rt eftersom b\u00e5de smaker, struktur och f\u00e4rg blir s\u00e5 mycket b\u00e4ttre.<\/p>\n<h2>Flammkuchen<\/h2>\n<p>4 \u2013 6 \u2013 8 personer<\/p>\n<ul>\n<li>250 g r\u00f6kt fl\u00e4sk i bit<\/li>\n<li>4 gula l\u00f6kar<\/li>\n<li>2 pizzadegar, egna eller k\u00f6pta<\/li>\n<li>1 \u00bd dl cr\u00e8me fraiche<\/li>\n<li>cheddarost, eller annan lagrad ost<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 250 grader. T\u00e4rna fl\u00e4sket och stek det knaprigt. L\u00e4gg upp p\u00e5 papper f\u00f6r att rinna av.<\/li>\n<li>Skiva l\u00f6ken tunt. F\u00f6rs\u00f6k beh\u00e5lla skivorna hela. Eller inte, men det blir snyggt : ) Stek p\u00e5 medelv\u00e4rme tills de f\u00e5r fin f\u00e4rg. St\u00e4ll \u00e5t sidan.<\/li>\n<li>Forma deg\u00e4mnena till ovala rundlar. Kavla ut dem l\u00e4tt. Bred ett tunt lager cr\u00e8me fraiche \u00f6ver ytan och l\u00e4gg p\u00e5 hyvlade skivor cheddarost. Osten beh\u00f6ver inte vara helt\u00e4ckande. L\u00e4gg p\u00e5 skivorna med mellanrum.<\/li>\n<li>F\u00f6rdela l\u00f6ken \u00f6ver ytan och str\u00f6 p\u00e5 fl\u00e4skbitarna. S\u00e4tt in i ugnen och gr\u00e4dda till botten \u00e4r klar och ytan f\u00e5tt fin f\u00e4rg. R\u00e4kna med att det tar cirka 10 min.<\/li>\n<\/ol>\n<p>Det h\u00e4r \u00e4r verkligen mycket gott. H\u00f6ga, raka umamitoner. En h\u00f6jdare helt enkelt.
