Potatis, \u00e4gg, gr\u00f6nt och v\u00e5rigt. P\u00e5skveckan \u00e4r h\u00e4r. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Tidiga v\u00e5ren \u00e4r en brytningstid. Det gamla ska rensas ut samtidigt som nytt, fr\u00e4scht \u00e4r p\u00e5 ing\u00e5ng. F\u00f6rra \u00e5rets potatis f\u00e5r ett lyft i m\u00f6tet med gr\u00f6na skott och supertidiga prim\u00f6rer.<\/p>\n<p>Jag g\u00f6r en matig sallad med potatis och \u00e4gg i grunden. En p\u00e5sksallad som \u00e4r prinskorvens och den varmr\u00f6kta laxens b\u00e4sta v\u00e4n. Jag lovar.<\/p>\n<p>H\u00e4r finns en s\u00e4rskild ingrediens som i det h\u00e4r sammanhanget f\u00e5r spela ett par helt nya roller.<\/p>\n<p>Jag plockar fram en p\u00e5se senapsfr\u00f6. Den h\u00f6r ihop med de stora helgerna och med sillen. Men nu ska de sm\u00e5 gula fr\u00f6na f\u00e5 en s\u00e4rskild och ny uppgift. Jag ska odla upp en omg\u00e5ng senapsskott och jag ska pickla ett g\u00e4ng. B\u00e5da varianterna blir perfekta i min potatis- och \u00e4ggsallad.<\/p>\n<p>De sm\u00e5 skotten beh\u00f6ver n\u00e5gra dagar s\u00e5 det \u00e4r h\u00f6g tid. L\u00e4gg ett tunt lager jord p\u00e5 ett fat eller liknade, str\u00f6 fr\u00f6na t\u00e4tt \u00f6ver ytan, vattna och t\u00e4ck med en aning jord. St\u00e4ll varmt, ljust och h\u00e5ll fuktigt, inte bl\u00f6tt.<\/p>\n<p>Snart har du en matta av gr\u00f6na skott. Liknar sm\u00f6rg\u00e5skrasse, men har en m\u00f6rkare gr\u00f6n f\u00e4rg, \u00e4r kraftigare och smakar mer.<\/p>\n<p>Den andra varianten \u00e4r picklade senapsfr\u00f6n. De blir inte alls s\u00e5 starka som man kan tro. Ger bara ett trevligt sting utan att man beh\u00f6ver dra efter andan. Jag kokar upp 4 msk vatten, 4 msk \u00e4ppelcidervin\u00e4ger, 1 \u00bd msk socker och 3 msk gult senapsfr\u00f6. Det hela sm\u00e5puttrar i 40 minuter och passar sedan att servera till allt d\u00e4r senap funkar.<\/p>\n<p>Och nu till en av p\u00e5skens sallader.<\/p>\n<h2>P\u00e5sksallad med senapssting<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>800 g fast potatis<\/li>\n<li>r\u00e4disor, en knippa<\/li>\n<li>125 g gr\u00f6na \u00e4rtor<\/li>\n<li>1 knippa gr\u00e4sl\u00f6k<\/li>\n<li>65 g machesallat, 1 liten p\u00e5se<\/li>\n<li>75 g \u00e4rtskott<\/li>\n<\/ul>\n<h4>Dressing<\/h4>\n<ul>\n<li>25 g \u00e4rtskott<\/li>\n<li>3 msk rapsolja<\/li>\n<li>1 msk \u00e4ppelcidervin\u00e4ger<\/li>\n<li>1\/2 &#8211; 3\/4 dl riven, lagrad ost<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<h4>Topping<\/h4>\n<ul>\n<li>4 kokta \u00e4gg<\/li>\n<li>2 msk picklade senapsfr\u00f6n<\/li>\n<li>skott av senapsfr\u00f6<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 200 grader. Tv\u00e4tta potatisen och sk\u00e4r i kvartar. L\u00e4gg p\u00e5 en pl\u00e5t, ringla \u00f6ver lite olja och salta innan potatisen st\u00e4lls i ugnen. Rosta tills den \u00e4r mjuk och f\u00e5tt fin f\u00e4rg i cirka 25 minuter. Ta ut och l\u00e5t svalna n\u00e5got.<\/li>\n<li>Skiva r\u00e4disorna supertunt, g\u00e4rna p\u00e5 en mandolin. Tina frysta \u00e4rtor n\u00e5gra sekunder i kokande saltat vatten. H\u00e4ll av. Sk\u00e4r gr\u00e4sl\u00f6ken fint.<\/li>\n<li>L\u00e4gg upp sallaten p\u00e5 ett fat. F\u00f6rdela potatisen \u00f6ver fatet. L\u00e4gg p\u00e5 \u00e4rtor, r\u00e4disor, gr\u00e4sl\u00f6k och \u00e4rtskott.<\/li>\n<li>Mixa \u00e4rtskott, olja och vin\u00e4ger till dressingen. R\u00f6r i osten och ringla dressingen \u00f6ver salladen. L\u00e4gg p\u00e5 \u00e4ggen i halvor och skeda ut de picklade senapsfr\u00f6na.
