Och det \u00e4r nu som de \u00e4r som b\u00e4st. L\u00e4r mer om favoriterna jord\u00e4rtskocka, svartrot och palsternacka. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Det var i b\u00f6rjan av april f\u00f6rra \u00e5ret som jag petade ner fr\u00f6 till svartrot och palsternacka. Sorterna heter Gladiator och Geante noire de russie. De sattes i l\u00e5dor med mullrik och r\u00e4tt sandig jord.<\/p>\n<p>En blandning som skiljer sig helt fr\u00e5n jorden de m\u00f6tt om jag s\u00e5tt dem direkt p\u00e5 friland. H\u00e4r \u00e4r rej\u00e4lt lerigt. Bra p\u00e5 m\u00e5nga s\u00e4tt, men det passar l\u00e5nga r\u00f6tter d\u00e5ligt och framf\u00f6rallt svartr\u00f6tterna \u00e4r om\u00f6jliga att gr\u00e4va upp i tung jord. De bryts helt enkelt av.<\/p>\n<p>Jag jobbar p\u00e5 att f\u00f6rb\u00e4ttra jorden p\u00e5 mina 6 (!) kolonilotter med stora m\u00e4ngder l\u00f6vmull och ensilage, men det tar sin tid. D\u00e4rf\u00f6r k\u00f6r jag l\u00e5dodling till r\u00f6tterna s\u00e5 l\u00e4nge och de verkar heln\u00f6jda.<\/p>\n<p>Efter 1 \u00e5r i jorden, en v\u00e4xts\u00e4song och en vinter, \u00e4r de ljuvliga. De \u00e4r spr\u00f6da och s\u00f6ta under en dryg m\u00e5nad tidigt p\u00e5 v\u00e5ren. Det g\u00e4ller att passa p\u00e5 innan de s\u00e4tter ig\u00e5ng att v\u00e4xa p\u00e5 riktigt inf\u00f6r sommaren. Det som h\u00e4nder d\u00e5 \u00e4r att de blir tr\u00e4iga och tar sats f\u00f6r att blomma och bilda fr\u00f6.<\/p>\n<p>Ungef\u00e4r vid samma tid som fr\u00f6na s\u00e5ddes planterade jag kn\u00f6lar fr\u00e5n den goda och vackert blommande jord\u00e4rtskockan bianca. Och h\u00e4r funkar leran fint, f\u00f6r nu, ett \u00e5r senare sk\u00f6rdar jag de finaste, tunnskaliga kn\u00f6larna.<\/p>\n<p>Alla tre har gemensamt att de blir godare efter en vinter. Jag ugnsrostar f\u00f6r att verkligen njuta av koncentrerade smaker och n\u00e4stan karamelliserad s\u00f6tma.<\/p>\n<p>Det enkla receptet \u00e4r att skala palsternackan som sedan skivas p\u00e5 l\u00e4ngden. Svartroten skalas och jord\u00e4rtskockorna tv\u00e4ttar jag noga utan att skala. Dela stora bitar i mindre, v\u00e4nd i olja, salta och rosta till fin f\u00e4rg i ugn p\u00e5 200 grader.
