V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Hollandaise, en av de grunds\u00e5serna. En bas som funkar utm\u00e4rkt precis som den \u00e4r, men som ocks\u00e5 kan utvecklas och bli \u00e4nnu lite mer. Extra fluff och nytt namn, mousselines\u00e5s, kommer om den blandas med vispad gr\u00e4dde. En annan variant \u00e4r att blanda din hollandaise med vispad \u00e4ggvita till en hollandaise avec blancs d\u00b4oeufs.<\/p>\n<p>Eftersom basen \u00e4r relativt neutral s\u00e5 kan smaks\u00e4ttningen varieras p\u00e5 m\u00e5nga s\u00e4tt. Idag satsar jag p\u00e5 gr\u00e4sl\u00f6k eftersom den \u00e4r s\u00e5 fantastiskt fin just nu. B\u00e5de str\u00e5 och knoppar f\u00e5r en plats p\u00e5 tallriken. En liten knippa fint skuren dill r\u00e5kade visst slinka med ocks\u00e5. Ett litet tips \u00e4r att g\u00f6ra en omg\u00e5ng till den f\u00f6rsta, svenska f\u00e4rskpotatisen.<\/figcaption><\/figure>\n<p>Hollandaise \u00e4r en emulsionss\u00e5s, det vill s\u00e4ga en f\u00f6rening av saker som egentligen inte alls vill f\u00f6renas, fett och v\u00e4tska. T\u00e4nk vin\u00e4grett som genast skiktar sig om du slutar vispa. Nu vill vi att sm\u00f6r och citron ska bilda en luftig enhet och det \u00e4r lecitin, ett \u00e4mne i \u00e4gget, som m\u00e4klar och g\u00f6r det m\u00f6jligt.<\/p>\n<p>Det h\u00e4r blir en blixtsnabb variant. Id\u00e9n \u00e4r densamma som n\u00e4r jag g\u00f6r majonn\u00e4s. Allt blandas i beh\u00e5llaren till en stavmixer och sedan \u00e4r det bara att k\u00f6ra ihop. H\u00e4r finns dock en avg\u00f6rande temperaturskillnad. Sm\u00f6ret ska sm\u00e4ltas och n\u00e5 en temperatur p\u00e5 80 grader innan det sl\u00e5s i beh\u00e5llaren och mixas.<\/p>\n<h2>Hollandaise \u2013 den snabbaste<\/h2>\n<ul>\n<li>1 stort \u00e4gg (eller 2 sm\u00e5) + 1 \u00e4ggula, rumstempererade<\/li>\n<li>2 msk<\/li>\n<li>225 g sm\u00f6r<\/li>\n<li>1\/2 tsk salt<\/li>\n<li>en nypa cayennepeppar<\/li>\n<\/ul>\n<h4>Dagens \u00f6rter<\/h4>\n<ul>\n<li>gr\u00e4sl\u00f6k<\/li>\n<li>dill<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Kn\u00e4ck ett helt \u00e4gg plus \u00e4ggulan i beh\u00e5llaren till en stavmixer.<\/li>\n<li>Pressa i citronsaften och h\u00e4ll i den tillsammans med salt och cayenne. Sm\u00e4lt sm\u00f6ret samtidigt som du vispar det. Kolla tempen med en ugnstermometer och n\u00e4r den n\u00e5r 75 grader \u00e4r det dags att sl\u00e5 sm\u00f6ret i en str\u00e5le ner i beh\u00e5llaren samtidigt som du s\u00e4tter mixerstaven i botten och gasar.<\/li>\n<li>Snart har du en fin holladaise. Sl\u00e4t, luftig och len. Smaka av med peppar och salt. Kanske vill du ha ytterligare n\u00e5gra droppar citron? Blanda med finskurna \u00f6rter eller str\u00f6 dem \u00f6ver.<\/li>\n<\/ol>\n<p>Idag fick min hollandaise s\u00e4llskap av sparris, men andra prim\u00f6rer passar ocks\u00e5 fint, eller fisk f\u00f6rst\u00e5s. Gr\u00e4sl\u00f6kens knoppar stektes hastigt och str\u00f6ddes \u00f6ver tallriken. Mycket gott!
