V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Min ganska mycket \u00e4ldre brorsa, M\u00e5ns, blev kock efter en l\u00e5ng praktik hos Tore Wretman p\u00e5 Operak\u00e4llaren. I sj\u00e4lva examen ingick att han skulle laga upp en r\u00e4tt efter eget recept. Och det blev str\u00f6mming.<\/p>\n<p>Jag \u00e4lskar den d\u00e4r blandningen. Finkrogens vita dukar, brutna servetter, det uppkl\u00e4dda och eleganta i kombination med husmanskosten. K\u00f6ttbullar, sj\u00f6mansbiff, dillk\u00f6tt och str\u00f6mming.<\/p>\n<p>Kockprovet gick alldeles utm\u00e4rkt och den presenterade r\u00e4tten var en utveckling av ett recept som redan fanns p\u00e5 krogen. Med ett par enkla till\u00e4gg blev det med ber\u00f6m godk\u00e4nt. Det nya bestod i dijonsenap och vitl\u00f6k. Nytt f\u00f6r tiden och en hint om att det franska k\u00f6ket var p\u00e5 ing\u00e5ng i salongerna.<\/p>\n<p>Str\u00f6mming f\u00f6rresten, vet ni vad den absolut viktigaste ingrediensen \u00e4r f\u00f6r att lyckas? Den ska vara nyf\u00e5ngad. Pinf\u00e4rsk helt enkelt.<\/p>\n<p>Mina frasstekta str\u00f6mmingar hamnar p\u00e5 en kn\u00e4ckemacka. Skivad kall f\u00e4rskpotatis i botten, dill, f\u00e4rsk l\u00f6k och majonn\u00e4s. En alldeles underbar sommarlunch kan jag lova.<\/p>\n<h2>Stekt str\u00f6mming p\u00e5 M\u00e5nses vis<\/h2>\n<p>4 pers<\/p>\n<ul>\n<li>600 g str\u00f6mmingsfil\u00e9<\/li>\n<li>2 \u00e4ggulor<\/li>\n<li>2 dl gr\u00e4dde<\/li>\n<li>1 msk dijonsenap<\/li>\n<li>1 vitl\u00f6ksklyfta<\/li>\n<li>salt<\/li>\n<li>peppar<\/li>\n<li>2 dl r\u00e5gmj\u00f6l<\/li>\n<\/ul>\n<h4>Till servering<\/h4>\n<ul>\n<li>kn\u00e4ckebr\u00f6d<\/li>\n<li>kokta, kalla f\u00e4rskpotatisar i skivor<\/li>\n<li>picklad gurka<\/li>\n<li>majonn\u00e4s<\/li>\n<li>sallat<\/li>\n<li>dill, finskuren<\/li>\n<li>r\u00f6dl\u00f6k i tunna ringar<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Blanda \u00e4ggulorna med gr\u00e4dden. Riv i vitl\u00f6ken och r\u00f6r ner senapen. Salta och peppra. L\u00e4gg i str\u00f6mmingen, t\u00e4ck och st\u00e4ll i kyl minst 4 timmar, men g\u00e4rna ett par till.<\/li>\n<li>H\u00e4ll upp r\u00e5gmj\u00f6l p\u00e5 ett fat. Blanda i lite salt. Ta upp str\u00f6mmingsfil\u00e9erna, vik ihop dem och v\u00e4nd i mj\u00f6let.<\/li>\n<li>Hetta upp rapsolja med en klick sm\u00f6r i en stekpanna. Stek fil\u00e9erna frasiga.<\/li>\n<li>Vi \u00e5t str\u00f6mmingen p\u00e5 kn\u00e4ckebr\u00f6d brett med majonn\u00e4s. Bottnade med skivad f\u00e4rskpotatis och sallat. Sedan str\u00f6mmingen, picklad gurka, skivad r\u00f6dl\u00f6k och dill p\u00e5 det. En sommarhit!<\/li>\n<\/ol>\n<p>Picklad gurka g\u00f6r du enkelt genom att l\u00e4gga supertunt skivad gurka i en lag ihopr\u00f6rd av en del \u00e4ttika, tv\u00e5 delar socker och tre delar vatten plus lite salt. L\u00e5t st\u00e5 minst en halvtimma. Och <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/majonnas-en-grundsas-att-beharska\/\">majonn\u00e4s fixar du p\u00e5 ett kick efter receptet i inl\u00e4gget h\u00e4r.\u00a0<\/a><\/p>\n<p>Och brorsan d\u00e5? Han har haft ett l\u00e5ngt matliv som kock och som programledare f\u00f6r radions Meny. Fortsatte f\u00f6r \u00f6vrigt p\u00e5 str\u00f6mmingstemat ocks\u00e5 och skrev <a href=\"https:\/\/www.bokborsen.se\/view\/Ahlin-Nils-Emil-Rossander-M\/Str%C3%B6mming-100-L%C3%A4ckra-Recept\/3321535\">en bok om sill och str\u00f6mming tillsammans med kr\u00f6garen Nils-Emil Ahlin.<\/a><\/p>\n<p>Allt gott!
