V\u00e4lkommen in i sommark\u00f6ket!<\/strong><\/p>\n<p>Allts\u00e5 att g\u00e5 in i v\u00e4xthuset och knipsa sig ett antal auberginer\u2026helt underbart. Jag har flera sorter och de \u00e4lskar den h\u00e4r varma sommaren. Samma sak med tomaterna som varje dag m\u00f6ter med en ny omg\u00e5ng sk\u00f6rdeklara frukter i olika f\u00e4rger och former.<\/p>\n<p>Den d\u00e4r grunden med aubergine och tomat liksom ropar pastas\u00e5s. I alla fall just idag, annars finns f\u00f6rst\u00e5s ett antal olika r\u00e4tter med den utg\u00e5ngspunkten. Men nu blir det pasta som dessutom kr\u00e4ver vitl\u00f6k, l\u00f6k och basilika. Allt inom r\u00e4ckh\u00e5ll p\u00e5 lotten.<\/p>\n<p>Ofta startar auberginerecept med att frukterna ska skivas och saltas f\u00f6r att eventuell beska ska dras ur, men jag brukar hoppa \u00f6ver den detaljen. Sk\u00f6rdar mina som sp\u00e4disar och vattnar rikligt. Kanske motar jag beskan redan d\u00e4r, men den som vill vara bergs\u00e4ker sk\u00e4r, saltar, l\u00e5ter st\u00e5 en stund och torkar sedan av noga innan stekning.<\/p>\n<p>Det h\u00e4r \u00e4r ett till\u00e5tande recept som inte beh\u00f6ver f\u00f6ljas slaviskt. Har du en squash att sk\u00f6rda, sk\u00e4r i den. Mer tomater? Absolut. Vitl\u00f6ken, ta bort eller l\u00e4gg till. Utg\u00e5ngspunkten \u00e4r mycket smak av sommarsk\u00f6rd med den italienska klacken som ett avtryck i tallriken.<\/p>\n<h2>Auberginepasta<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>1 stor aubergine eller flera sm\u00e5<\/li>\n<li>2 \u2013 3 f\u00e4rska knippl\u00f6kar<\/li>\n<li>700 g tomater, g\u00e4rna solmogna<\/li>\n<li>eventuellt f\u00e4rsk chili<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<li>1 knippa basilika<\/li>\n<li>2 \u2013 3 vitl\u00f6ksklyftor<\/li>\n<li>\u00bd dl olivolja<\/li>\n<li>400 g penne rigate<\/li>\n<li>lagrad ost att riva<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Sk\u00e4r auberginen i t\u00e4rningar. Skiva l\u00f6ken tunt. Stek tillsammans p\u00e5 medelv\u00e4rme tills de mjuknar och f\u00e5r lite yta.<\/li>\n<li>Sk\u00e4r tomaterna i bitar och l\u00e4gg ner dem i pannan. Vill du smaks\u00e4tta med chili s\u00e5 finhackar du och tills\u00e4tter den. L\u00e5t sm\u00e5puttra och smaka av med salt och peppar.<\/li>\n<li>Hacka basilika och vitl\u00f6k riktigt fint. Blanda med olivoljan.<\/li>\n<li>Koka pastan i gener\u00f6st saltat vatten. H\u00e4ll av och r\u00f6r genast i basilika- och vitl\u00f6ksoljan. K\u00e4nn doften! H\u00e4ll \u00f6ver aubergines\u00e5sen, v\u00e4nd f\u00f6rsiktigt runt och avsluta med riven ost. Servera \u00e5ngande het, pronto.<\/li>\n<\/ol>\n<p>Om du liksom jag k\u00e4nner att det h\u00e4r \u00e4r en aubergine- och tomatdag s\u00e5 kanske du vill ha fler m\u00f6jligheter.
