Sm\u00e5 flammor sl\u00e5r upp av droppande fett och det \u00e4r bara s\u00e5 mycket sommar. V\u00e4lkommen ut till grillen!<\/strong><\/p>\n<p>Idag blir det k\u00f6ttprat. Av en som i huvudsak \u00e4ter gr\u00f6nt, men just grillat k\u00f6tt..! Det k\u00e4nns genuint, ursprungligt och doften v\u00e4cker n\u00e5got p\u00e5 samma s\u00e4tt som alldeles nybakat br\u00f6d. Jag kan inte motst\u00e5.<\/p>\n<p>Helst grillar jag egentligen hela bitar som biff i tjocka skivor. Den kan sedan skivas och serveras i tunna bitar. Kryddningen \u00e4r enkel. Bara salt. Sedan svartpeppar direkt fr\u00e5n kvarnen strax f\u00f6re servering.<\/p>\n<p>Men s\u00e5 h\u00e4nder det att spetten kommer fram och d\u00e5 finns n\u00e5gra bra-att-ha-knep.<\/p>\n<h2>Grillade k\u00f6ttspett \u2013 6 tips<\/h2>\n<ol>\n<li>Sk\u00e4r k\u00f6ttet i lika stora bitar. Sm\u00e5 och st\u00f6rre blandat kan bli en mix av kruttorrt och r\u00e5tt.<\/li>\n<li>Glaze penslas p\u00e5 strax innan k\u00f6ttet \u00e4r klart. Eftersom glaze ofta \u00e4r r\u00e4tt s\u00f6t kommer den br\u00e4nna innan k\u00f6ttet \u00e4r f\u00e4rdigt om den penslas p\u00e5 f\u00f6r tidigt.<\/li>\n<li>Marinad ska torkas av. Inneh\u00e5ller den fett som droppar blir flammorna f\u00f6r m\u00e5nga och den trivsamma kolsmaken blir ist\u00e4llet bara br\u00e4nt.<\/li>\n<li>Vill du blanda gr\u00f6nsaker och k\u00f6tt p\u00e5 ett och samma spett s\u00e5 m\u00e5ste bitarna anpassas s\u00e5 att de inte \u00e4r helt r\u00e5a n\u00e4r k\u00f6ttet b\u00f6rjar bli klart. Undantaget \u00e4r f\u00e4rsspett d\u00e4r man kan g\u00e5 p\u00e5 rej\u00e4lt med smaks\u00e4ttning.<\/li>\n<\/ol>\n<p>En av sommarens favoriter \u00e4r just f\u00e4rsspett med \u00f6rtsalsa och receptet kommer h\u00e4r. F\u00e4rsen plattas till lite n\u00e4r de s\u00e4tts p\u00e5 spetten och sj\u00e4lva tillagningen g\u00e5r fort. Det kan trots allt vara bra att k\u00e4nna till att just f\u00e4rs ska tillagas till en innertemperatur p\u00e5 70 grader. Inga blodiga spett eller hamburgare allts\u00e5.<\/p>\n<h2>F\u00e4rsspett med \u00f6rtsalsa<\/h2>\n<p>4 \u2013 6 personer<\/p>\n<ul>\n<li>800 g k\u00f6ttf\u00e4rs, n\u00f6t eller lamm<\/li>\n<li>3 skivor vitt formbr\u00f6d<\/li>\n<li>1 vitl\u00f6ksklyfta<\/li>\n<li>1 chilifrukt<\/li>\n<li>n\u00e5gra kvistar f\u00e4rsk oregano eller 1 tsk torkad<\/li>\n<li>1 \u00e4gg<\/li>\n<li>1 msk koncentrerad kalv- eller gr\u00f6nsaksfond<\/li>\n<li>\u00bd tsk spiskummin<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<h4>\u00d6rtsalsa<\/h4>\n<ul>\n<li>1 knippa basilika<\/li>\n<li>1 knippa persilja<\/li>\n<li>1 \u2013 1 \u00bd dl rapsolja<\/li>\n<li>1 vitl\u00f6ksklyfta<\/li>\n<li>salt<\/li>\n<\/ul>\n<p><strong>G\u00f6r s\u00e5h\u00e4r\u00a0<\/strong><\/p>\n<ol>\n<li>L\u00e4gg f\u00e4rsen i en bunke. Mixa br\u00f6det till smulor. Riv vitl\u00f6ken. Hacka chilin mycket fint. Finhacka oreganon.<\/li>\n<li>Blanda ingredienserna och forma l\u00e4tt tillplattade avl\u00e5nga biffar. Tr\u00e4 tv\u00e5 spett p\u00e5 l\u00e4ngden genom varje biff.<\/li>\n<li>Grilla eller stek till fin f\u00e4rg.<\/li>\n<li>L\u00e4gg de grovhackade \u00f6rterna till salsan i en mixer. Hetta upp oljan till 55 grader och h\u00e4ll den genast \u00f6ver \u00f6rterna. L\u00e4gg i vitl\u00f6ken och lite salt. Mixa till en knallgr\u00f6n \u00f6rtsalsa.<\/li>\n<li>Servera spetten p\u00e5 salladsb\u00e4dd med \u00f6rtsalsan vid sidan.<\/li>\n<\/ol>\n<p>Man kan undra varf\u00f6r oljan till \u00f6rterna ska hettas upp?
