En klick sm\u00f6r till och mer beh\u00f6vs inte. Annat \u00e4r det med gulbetor som inte alls p\u00e5 samma s\u00e4tt g\u00f6r sig kokta. B\u00e5de f\u00e4rg och smak mattas och de f\u00f6rlorar liksom gnistan.<\/p>\n<p>Den som vill \u00e4ta gulbetor varma g\u00f6r gott i att dra p\u00e5 ugnen p\u00e5 200 &#8211; 225 grader. L\u00e4gg sedan betorna skalade och klyftade i en form tillsammans med olivolja, salt och timjan, eller rosmarin, eller b\u00e5deoch. N\u00e4r betorna f\u00e5tt f\u00e4rg smakar de ljuvligt med n\u00e5got lite syrligt och n\u00e5got salt. Ett hett tips \u00e4r att mixa ihop getost och rysk yoghurt till en sl\u00e4t r\u00f6ra. Mycket bra kombo.<\/p>\n<p>Jag har aldrig provat att g\u00f6ra en klassisk inl\u00e4ggning p\u00e5 gulbetor, men den h\u00e4r varianten \u00e4r \u00e5terkommande. Jag picklar f\u00f6r direktkonsumtion, eller i alla fall f\u00f6r f\u00f6rt\u00e4ring inom kort. F\u00e4rsbiffar, stekt fisk eller p\u00e5 en macka med leverpastej.<\/p>\n<h2>Dill- och chilipicklade gulbetor<\/h2>\n<ul>\n<li>500 g gulbetor<\/li>\n<li>1 r\u00f6d l\u00f6k<\/li>\n<li>4 dillkronor<\/li>\n<li>1 f\u00e4rsk medelstark chili<\/li>\n<li>1 citron<\/li>\n<\/ul>\n<h4>Lag<\/h4>\n<ul>\n<li>1 dl \u00e4ttika<\/li>\n<li>2 dl socker<\/li>\n<li>3 dl vatten<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Skala betorna och skiva dem mycket tunt, g\u00e4rna med hj\u00e4lp av en mandolin. Sk\u00e4r r\u00f6dl\u00f6ken i fina ringar. Plocka fr\u00f6na fr\u00e5n ett par av dillkronorna men beh\u00e5ll en hel.<\/li>\n<li>Smaka f\u00f6rsiktigt p\u00e5 chilin och l\u00e5t styrkan avg\u00f6ra m\u00e4ngd innan den hackas fint. Dela citronen p\u00e5 mitten. Sk\u00e4r ett par skivor och pressa saften ur resten.<\/li>\n<li>L\u00e4gg lagens ingredienser i en kastrull koka upp. L\u00e4gg betor l\u00f6k, dill, chili och citron i en sk\u00e5l eller burk och h\u00e4ll den heta lagen \u00f6ver.
