Inga konstigheter, men tillagad med omsorg en riktig festr\u00e4tt. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>En av sommarens favoriter. I alla fall f\u00f6r mig. S\u00e5h\u00e4r doftade k\u00f6ket i sommarhuset p\u00e5 \u00f6n. D\u00e4r fanns lusten att v\u00e4nta ut l\u00f6ken tills den fick den d\u00e4r speciella glansigt brynta ytan. Den som bara tillr\u00e4ckligt med tid kan \u00e5stadkomma.<\/p>\n<p>Och det \u00e4r l\u00f6ken som g\u00f6r den stora skillnaden. Fast visst spelar biffarna roll de ocks\u00e5.<\/p>\n<p>Jag anv\u00e4nder f\u00e4rskmixat br\u00f6d eftersom jag tycker str\u00f6br\u00f6d blir stabbigt. Mj\u00f6lk eller gr\u00e4ddmj\u00f6lk om f\u00e4rsen \u00e4r mager. Nu till verket.<\/p>\n<h2>Pannbiff med l\u00f6k<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>500 g n\u00f6t- eller blandf\u00e4rs<\/li>\n<li>1 liten gul l\u00f6k<\/li>\n<li>3 skivor vitt formbr\u00f6d<\/li>\n<li>1 \u00bd dl mj\u00f6lk<\/li>\n<li>1 \u00e4gg<\/li>\n<li>svartpeppar<\/li>\n<li>salt<\/li>\n<\/ul>\n<h4>Stekt l\u00f6k med sky<\/h4>\n<ul>\n<li>3 \u2013 4 gula l\u00f6kar<\/li>\n<li>salt<\/li>\n<li>1 nypa socker<\/li>\n<li>sm\u00f6r<\/li>\n<li>\u00bd msk koncentrerad kalvfond<\/li>\n<li>2 &#8211; 3 msk vatten<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Hacka l\u00f6ken till f\u00e4rsen mycket fint. Stek den i rapsolja p\u00e5 medelv\u00e4rme till fin f\u00e4rg. L\u00e5t svalna.<\/li>\n<li>S\u00e4tt ugnen p\u00e5 100 grader. Mixa br\u00f6dskivorna till smulor. Blanda med mj\u00f6lk, \u00e4gg, svartpeppar och l\u00e5t st\u00e5 n\u00e5gra minuter innan allt blandas med den stekta l\u00f6ken och f\u00e4rsen. Blanda inte f\u00f6r mycket, f\u00e4rsen ska bara precis g\u00e5 ihop.<\/li>\n<li>Forma fyra pannbiffar, eller fler, och stek till fin f\u00e4rg p\u00e5 b\u00e5da sidor. S\u00e4tt in i ugnen f\u00f6r att biffarna ska g\u00e5 klart i lugn och ro.<\/li>\n<li>Halvera l\u00f6karna och sk\u00e4r dem i tunna skivor. Stek p\u00e5 l\u00e5g-medelv\u00e4rme i rapsolja. L\u00e4gg i l\u00f6ken och l\u00e5t den ligga ifred n\u00e5gra minuter. V\u00e4nd den varsamt, salta l\u00e4tt och l\u00e4mna den ytterligare n\u00e5gra minuter. G\u00f6r om proceduren ett par g\u00e5nger. Str\u00f6 \u00f6ver en nypa socker och klicka i lite sm\u00f6r men r\u00f6r inte utan l\u00e5t den puttra p\u00e5.<\/li>\n<li>N\u00e4r l\u00f6ken mjuknat och f\u00e5tt fin f\u00e4rg l\u00e4ggs den upp p\u00e5 biffarna. Vispa ur pannan med lite vatten, kalvfond och avsluta eventuellt med \u00e4nnu en klick sm\u00f6r. H\u00e4ll skyn runt biffarna.<\/li>\n<\/ol>\n<p>Till detta serverar jag salt- eller pressgurka. Pressgurka g\u00f6r du snabbt och enkelt med \u00bd &#8211; \u00be finskivad gurka, \u00bd dl \u00e4ttika, 1 dl socker, 1 \u00bd dl vatten plus lite salt. Blanda lagen och l\u00e4gg i gurkan som f\u00e5r ligga minst 15 min g\u00e4rna l\u00e4ngre. Blanda eventuellt i lite riktigt finhackad persilja.<\/p>\n<p>Och n\u00e4r vi nu \u00e4nd\u00e5 \u00e4r inne p\u00e5 husmansp\u00e5ret kanske du vill <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/frasigt-stekt-stromming-sommarhusman\/\">kika p\u00e5 en frasigt stekt str\u00f6mmingsklassiker som finns i inl\u00e4gget h\u00e4r<\/a>.
