Kraschad ger inte utrymme f\u00f6r n\u00e5gra fr\u00e5getecken. Och det \u00e4r verkligen precis s\u00e5 enkelt. Kokad fortfarande varm eller ljummen potatis trycks till, kryddas upp och f\u00e5r sedan tillbringa en stund i ugnen.<\/p>\n<p>Jag brukar ta till knytn\u00e4ven f\u00f6r att f\u00e5 till den perfekt trasade ytan. Man vill att den ska \u00f6ppna upp sig och att det ska finnas toppar som blir ljuvligt frasiga i ugnen.<\/p>\n<p>Skalet ska definitivt vara kvar. Det h\u00e5ller ihop, ger smak och blir krispigt. Det h\u00e4r \u00e4r helt enkelt en potatisr\u00e4tt som kr\u00e4ver skal. S\u00e5 \u00e4r det. Punkt.<\/p>\n<p>Krossa potatis p\u00e5 det h\u00e4r s\u00e4ttet kan g\u00f6ras \u00e5ret om, men nu \u00e4r peaken. Den allra b\u00e4sta tiden. Potatisen \u00e4r nyupptagen, men smaken \u00e4r mogen. Skillnaderna mellan olika sorter \u00e4r tydlig. Potatis \u00e4r en favorit \u00e5ret om, men fr\u00e5gan \u00e4r om inte augusti \u2013 september \u00e4r n\u00e5got av h\u00f6jdpunkten.<\/p>\n<p>Dags att plocka fram knytn\u00e4varna.<\/p>\n<h2>Kraschad potatis med vitl\u00f6kssm\u00f6r och ost<\/h2>\n<p>4 \u2013 6 personer<\/p>\n<ul>\n<li>1 kg potatis<\/li>\n<li>75 g sm\u00f6r<\/li>\n<li>1 stor vitl\u00f6ksklyfta, riven<\/li>\n<li>50 g riven ost, V\u00e4sterbottens eller pr\u00e4st<\/li>\n<li>finhackad persilja, timjan och rosmarin<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Koka potatisen mjuk. L\u00e5t svalna n\u00e5got.<\/li>\n<li>S\u00e4tt ugnen p\u00e5 225 grader. L\u00e4gg upp potatisen p\u00e5 en pl\u00e5t och krossa dem med knytn\u00e4ven. Salta l\u00e4tt.<\/li>\n<li>Sm\u00e4lt sm\u00f6ret i en kastrull, ta fr\u00e5n v\u00e4rmen och r\u00f6r i vitl\u00f6k och ost. Klicka blandningen \u00f6ver potatisen. S\u00e4tt in i ugnen tills de f\u00e5tt fin f\u00e4rg cirka 20 minuter. Ta ut och str\u00f6 \u00f6ver krydd\u00f6rterna. Dra ett par tag p\u00e5 pepparkvarnen \u00f6ver.<\/li>\n<\/ol>\n<p>Den h\u00e4r potatisen passar till mycket. Inte minst till en vegetarisk m\u00e5ltid.
