V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>N\u00e5got av det b\u00e4sta med att vara en samlare \u00e4r att resultatet blir s\u00e5 mycket mer \u00e4n en burk i kylen. F\u00f6rutom smak och doft av nypon, kanel och ettrig \u00e4ttika s\u00e5 \u00e4r det som att \u00f6ppna locket till just den dagen. Den milda h\u00f6stluften, de virvlande l\u00f6ven, f\u00e4rgerna, den jordiga h\u00f6stdoften.<\/p>\n<p>Burken bjuder inte bara smak till viltsteken utan serverar en hel h\u00f6stdag som en del av m\u00e5ltiden. Det mottot g\u00e4ller f\u00f6r var och en av burkarna i kylen.<\/p>\n<p>Den tidiga h\u00f6stens syrardagar finns bevarade bland r\u00f6dbetor, gurkor och mor\u00f6tter. N\u00e4r locket p\u00e5 rabarbermarmeladen klickar till p\u00e5 julaftons morgon f\u00f6ljer en bit av f\u00f6rsommaren med. Fl\u00e4derblommorna jag picklade ger hopp om ljus och f\u00e5gels\u00e5ng. S\u00e5 mycket mer \u00e4n bara smak och doft.<\/p>\n<p>Den som vill sylta nypon ska engagera sitt t\u00e5lamod. Det \u00e4r pilligt och jag n\u00f6jer mig med en burk. Nyponen ska putsas fr\u00e5n den lilla stj\u00e4lken och blomfnaset i toppen. Sedan ska de halveras och alla k\u00e4rnorna ska bort. Enklast skrapas de bort med en liten sked. Sk\u00f6lj nyponen och tv\u00e4tta h\u00e4nderna noga eftersom k\u00e4rnorna funkar som klipulver.<\/p>\n<p>I \u00e5r \u00e4r det gott om nypon och har du vresrosor i din n\u00e4rhet s\u00e5 \u00e4r mitt tips att satsa p\u00e5 dem. De \u00e4r st\u00f6rre och k\u00f6ttigare.<\/p>\n<h2>Syltade nypon<\/h2>\n<ul>\n<li>1 l nypon<\/li>\n<li>3 dl socker<\/li>\n<li>2 dl vatten<\/li>\n<li>3\/4 dl \u00e4ttikssprit 12%<\/li>\n<li>1 stor kanelst\u00e5ng<\/li>\n<li>6 kryddnejlikor<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Ansa nyponen \u2013 ta bort skaft och blomf\u00e4ste. Halvera och skrapa ur k\u00e4rnorna. Sk\u00f6lj noga.<\/li>\n<li>Koka upp lagen och l\u00e5t nyponen sjuda med 20 minuter.<\/li>\n<li>H\u00e4ll upp p\u00e5 het, ren burk. F\u00f6rvara i kyl.<\/li>\n<\/ol>\n<p>Nyponen passar fint till stek och till grytor, g\u00e4rna p\u00e5 vilttema.
