Tomats\u00e4songen p\u00e5g\u00e5r f\u00f6r fullt och jag ger j\u00e4rnet! V\u00e4lkommen in i k\u00f6ket!\u00a0<\/strong><\/p>\n<p>Smaken av en solmogen tomat \u00e4r komplex. S\u00f6t med en pigg syrlighet, men d\u00e4r finns ocks\u00e5 ett djup och en rymd. N\u00e5got som tar plats. Det \u00e4r umami. Den femte grundsmaken. N\u00e4mns ofta i samband med k\u00f6tt och ost, men finns dessutom i tomat.<\/p>\n<p>Allra tydligast blir det n\u00e4r tomaterna v\u00e4rms och kokas ihop n\u00e5got. Smakerna koncentreras helt enkelt. I \u00e5r har jag confiterat tomter p\u00e5 l\u00f6pande band. De f\u00e5r ligga i olja med vitl\u00f6k och kryddor riktigt l\u00e4nge p\u00e5 l\u00e5g v\u00e4rme. Det g\u00e5r lika bra med en snabbare ugnsrostad variant, men har du tid och lust s\u00e5..recept i l\u00e4nken nedan.<\/figcaption><\/figure>\n<p>Jag mixar till s\u00e5s och serverar till pasta, till fisk, k\u00f6tt, till rostad potatis, stekta \u00e4gg..och s\u00e5 vidare. Vi str\u00f6sslar de sm\u00e5 juvelerna i en sallad och \u00e4ter med burrata och gott br\u00f6d. Jag har de i vegetariska bowls tillsammans med hummus, oliver och rostade gr\u00f6nsaker. Ja ni fattar, de f\u00f6rgyller det mesta.<\/p>\n<p>Och idag \u00e4r det risottodags. Risotto \u00e4r l\u00e4tt. Du kommer inte att \u00e5ngra dig.<\/p>\n<h2>Tomatrisotto<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>500 g confiterade eller ugnsrostade k\u00f6rsb\u00e4rstomater<\/li>\n<li>8 \u2013 9 dl h\u00f6ns- eller vegobuljong<\/li>\n<li>1 schalottenl\u00f6k<\/li>\n<li>3 dl risottoris, Carnaroli eller Arborio<\/li>\n<li>1 \u00bd dl vitt vin<\/li>\n<li>2 dl finriven, smakrik ost<\/li>\n<li>1 msk sm\u00f6r<\/li>\n<li>f\u00e4rska \u00f6rter, persilja eller basilika<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Koka upp buljongen och h\u00e5ll den varm.<\/li>\n<li>Hacka schalottenl\u00f6ken riktigt fint och stek den varsamt i en kastrull med lite olja. L\u00f6ken ska inte ta f\u00e4rg, bara mjukna och bli glansig.<\/li>\n<li>R\u00f6r ner riset som f\u00e5r fr\u00e4sa med n\u00e5gon minut innan vinet h\u00e4lls p\u00e5. L\u00e5t vinet koka in samtidigt som du r\u00f6r i pannan. Forts\u00e4tt att sp\u00e4da med den heta buljongen, lite i taget. R\u00f6r och sp\u00e4d, r\u00f6r och sp\u00e4d.<\/li>\n<li>Riset kommer att vara perfekt kokt med en aning tuggmotst\u00e5nd efter 18 \u2013 20 minuter. En av de viktigaste detaljerna i ett risottokok \u00e4r att l\u00e5ta r\u00e4tten vara kr\u00e4mig.
