V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Karljohan, kungen i svamparnas rike. S\u00e5 \u00e4r det bara. F\u00e4rsk kan de smakrika, knubbiga svamparna stekas till en perfekt yta och serveras p\u00e5 m\u00e5nga s\u00e4tt, men torkad \u00e4r \u00e4nd\u00e5 allra b\u00e4st. D\u00e5 bjuder de p\u00e5 en koncentrerad umamiton som verkligen g\u00f6r underverk.<\/p>\n<p>Torkad karljohan mals\u00a0 och anv\u00e4nds som smaks\u00e4ttare utan att tydligt annonsera att det handlar om svamp. Den kan tills\u00e4ttas i s\u00e5 sm\u00e5 m\u00e4ngder att ingen riktigt kan s\u00e4ga vad det \u00e4r som ger det d\u00e4r fantastiska djupet. Och volymen. Det smakar mycket, men av vad..? Det \u00e4r fr\u00e5gan. Och svaret \u00e4r allts\u00e5 torkad svamp.<\/p>\n<p>Karljohan \u00e4r nummer ett, men det finns v\u00e4rdiga ers\u00e4ttare, svart trumpetsvamp, eller gul. Alternativt trattkantarell som verkligen har sin storhet just som torkad. Alla blir de n\u00e5got mer \u00e4n sitt f\u00e4rska jag i torkprocessen och de har en hedersplats bland mina kryddor.<\/p>\n<p>Torkad svamp bjuder allts\u00e5 p\u00e5 umami. Ni vet den femte smaken vid sidan av s\u00f6tt, surt, salt och beskt. Umami \u00e4r japanska och betyder ungef\u00e4r mustig. Smaken som kommer exempelvis med en l\u00e5ngputtrad k\u00f6ttgryta, en lagrad ost, buljong, soja och tomat, s\u00e4rskilt torkad.<\/p>\n<p>Jag har s\u00e4rskilt stor gl\u00e4dje av torkad svamp n\u00e4r jag smaks\u00e4tter grytor, r\u00f6dvinss\u00e5ser, majonn\u00e4s, soppor eller f\u00e4rsbiffar.<\/p>\n<p>Efter torkning mal jag svampen mer eller mindre fint. Grovt till f\u00e4rsbiffar, helt pulveriserad till en majonn\u00e4s. M\u00e4ngden beror p\u00e5 om jag bara vill hinta eller verkligen understryka. Det \u00e4r bara att prova sig fram och hitta egna preferenser.<\/p>\n<p>Torkprocessen \u00e4r enkel och s\u00e5h\u00e4r g\u00e5r det till.<\/p>\n<h2>Torkad svamp<\/h2>\n<ul>\n<li>Rensa svampen noga. Sk\u00e4r bort och sl\u00e4ng angripna delar.<\/li>\n<li>Sk\u00e4r karljohan i tunna skivor, h\u00f6gst ett par mm. Trattkantarell och trumpetsvamp kan delas. Bra att veta att gul kantarell inte g\u00f6r sig som torkad.<\/li>\n<li>S\u00e4tt ugnen p\u00e5 50 grader. L\u00e4gg svamparna glest p\u00e5 pl\u00e5tar. Med varmluft kan flera pl\u00e5tar k\u00f6ras p\u00e5 en g\u00e5ng. Ugnsluckan ska st\u00e5 p\u00e5 gl\u00e4nt. Fixas enkelt med en tr\u00e4sked i glipan.<\/li>\n<li>Svampen ska torka helt. S\u00e5 pass att den kan smulas. R\u00e4kna med att det tar n\u00e5gra timmar. R\u00f6r om p\u00e5 pl\u00e5tarna n\u00e5gra g\u00e5nger under torktiden.<\/li>\n<li>F\u00f6rvara den torkade svampen i glasburkar eller pappersp\u00e5sar. De h\u00e5ller flera \u00e5r.
