V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>De d\u00e4r r\u00f6rorna, h\u00f6ga smaker och kr\u00e4mig struktur, att \u00e4ta med gott br\u00f6d. Passar p\u00e5 ett bord med flera sm\u00e5r\u00e4tter att plocka bland. Eller i en bowl. Ni vet, en sk\u00e5l fylld med ett antal goda grejer. N\u00e5got fr\u00e4scht krispigt, n\u00e5got matigt, n\u00e5got kr\u00e4migt och s\u00e5 vidare.<\/p>\n<p>Det h\u00e4r \u00e4r en r\u00e4tt med utseendet emot sig. Inte j\u00e4ttesnygg, men jag f\u00f6rs\u00e4krar att smaken \u00e4r underbar. Och har du, liksom jag, en egen sk\u00f6rd av aubergine att ta hand om s\u00e5 finns ingen \u00e5terv\u00e4ndo. Jag v\u00e4ljer att sk\u00e4ra mina egna, nysk\u00f6rdade auberginer hela i bitar och steka i panna innan de mixas. Vanligare \u00e4r att grilla dem hela och skala, men varf\u00f6r skippa skalet som inneh\u00e5ller s\u00e5 mycket bra grejer?<\/figcaption><\/figure>\n<p>Oftast grillas auberginen hel f\u00f6r att sedan skalas, men jag v\u00e4ljer ett annat tillagningss\u00e4tt. Mycket av auberginens fina fibrer sitter i skalet s\u00e5 jag anv\u00e4nder dem hela. Enkelt och helt utan svinn. F\u00e4rgen p\u00e5 r\u00f6ran p\u00e5verkas m\u00f6jligen och blir lite m\u00f6rkare, men mig st\u00f6r det inte.<\/p>\n<p>Jag sk\u00e4r de i bitar och steker sedan l\u00e4nge med gener\u00f6sa m\u00e4ngder olja innan de mixas tillsammans med \u00f6vriga ingredienser. Mycket gott med fin konsistens.<\/p>\n<h2>Baba ganoush<\/h2>\n<ul>\n<li>2 \u2013 8 auberginer, beroende p\u00e5 storlek<\/li>\n<li>1 dl olivolja<\/li>\n<li>2 msk ljus tahini, sesampasta<\/li>\n<li>1 stor vitl\u00f6ksklyfta<\/li>\n<li>1 citron<\/li>\n<li>salt<\/li>\n<li>eventuellt lite mald spiskummin<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Sk\u00e4r auberginerna i bitar. Salta l\u00e4tt och stek i olja p\u00e5 medelv\u00e4rme l\u00e4nge. Bitarna ska bli helt mjuka.<\/li>\n<li>L\u00e4gg i en mixerbeh\u00e5llare tillsammans med tahini, vitl\u00f6k och den pressade saften fr\u00e5n halva citronen. Mixa och smaka av med mer citron, salt och lite spiskummin om du gillar det. Avsluta med att ringla lite olivolja \u00f6ver.<\/li>\n<\/ol>\n<p>Servera med gott br\u00f6d att doppa i.
