V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Patatas bravas \u2013 inte \u00e4r jag alldeles s\u00e4ker, men namnet \u201dbravas\u201d s\u00e4gs den ha f\u00e5tt f\u00f6r hettan i en av s\u00e5serna. Brava \u00f6vers\u00e4tts ungef\u00e4r som arg eller ilsken. S\u00e5 \u00e4r det i alla fall, att den r\u00f6da tomatbaserade s\u00e5sen, ska ha en tydlig chilihetta som balanseras av potatis och aioli.<\/p>\n<p>Tapas \u00e4r mattrenden som inte ger sig. Har h\u00e5llit ig\u00e5ng i \u00e5rtionden och varf\u00f6r inte? Plockiga serveringar med flera sm\u00e5r\u00e4tter. Olika smak, struktur och temperaturer som kan underh\u00e5lla m\u00e5nga, l\u00e4nge.<\/p>\n<p>Det finns n\u00e5got f\u00f6r alla och inte beh\u00f6ver det vara s\u00e5 m\u00e4rkv\u00e4rdigt heller. Gott br\u00f6d, oliver, en ostbit, lufttorkad skinka och melon eller n\u00e5gon annan frukt, r\u00e4kor kanske eller musslor. N\u00e5got gott att dricka och s\u00e5 en potatisr\u00e4tt.<\/p>\n<p>Inga ambiti\u00f6sa dukningar. En tallrik, en gaffel och n\u00e5got att torka fingrarna p\u00e5. Det r\u00e4cker.<\/p>\n<p>Den h\u00e4r potatisen funkar f\u00f6r \u00f6vrigt ocks\u00e5 fint att servera till en bit k\u00f6tt, fisk eller till en chorizo. Kombinationen tomats\u00e5s, potatis och aioli passar till mycket. En sallad till det och du har en hel, enkel m\u00e5ltid.<\/p>\n<p>Tomats\u00e5sen ska vara chilihet, men inte p\u00e5 bekostnad av tomatsmaken. V\u00e4lj d\u00e4rf\u00f6r en riktigt god tomat. Har du egna, nysk\u00f6rdade ta dem annars \u00e4r sm\u00e5 burktomater ett bra alternativ.<\/p>\n<h2>Patatas bravas<\/h2>\n<p>800 g potatis<\/p>\n<h4>Tomats\u00e5s<\/h4>\n<ul>\n<li>1 liten gul l\u00f6k<\/li>\n<li>2 vitl\u00f6ksklyftor<\/li>\n<li>1 burk k\u00f6rsb\u00e4rstomater<\/li>\n<li>2 tsk sherry- eller balsamvin\u00e4ger<\/li>\n<li>1 medelstark f\u00e4rsk chili, eller flakes, eller chilipasta<\/li>\n<li>\u00bd tsk socker<\/li>\n<li>salt<\/li>\n<\/ul>\n<h4>Vitl\u00f6ksmajonn\u00e4s &#8211; aioli<\/h4>\n<ul>\n<li>1 \u00e4gg, rumstempererat<\/li>\n<li>1 msk dijonsenap<\/li>\n<li>\u00bd tsk salt<\/li>\n<li>2 \u00bd dl rapsolja, rumstempererad<\/li>\n<li>1 \u2013 2 vitl\u00f6ksklyftor<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 225 grader. Dela tv\u00e4ttade potatisar med skalet kvar i kvartar eller mindre bitar. De ska kunna \u00e4tas i en tugga. L\u00e4gg p\u00e5 en pl\u00e5t och ringla \u00f6ver olja. Var gener\u00f6s. Det g\u00f6r mycket f\u00f6r ytan och de kommer inte att suga \u00e5t sig av oljan. Salta, v\u00e4nd runt och s\u00e4tt in i ugnen. Ta ut n\u00e4r potatisen f\u00e5tt fin f\u00e4rg efter cirka 25 minuter, beroende p\u00e5 bitarnas storlek.<\/li>\n<li>Finhacka l\u00f6k och vitl\u00f6k till tomats\u00e5s. Fr\u00e4s p\u00e5 l\u00e5g v\u00e4rme till fin f\u00e4rg. H\u00e4ll p\u00e5 tomaterna och vin\u00e4ger. L\u00e5t sm\u00e5puttra n\u00e5gra minuter.<\/li>\n<li>Hacka och l\u00e4gg i chili. Smaka en liten bit om du \u00e4r os\u00e4ker p\u00e5 hettan. Tanken \u00e4r het, aromatisk s\u00e5s. Inte bara stark. H\u00e4ll p\u00e5 sockret och lite salt. Koka ihop p\u00e5 l\u00e5g v\u00e4rme cirka 10 min, mixa och smaka av med salt och eventuellt mer chili.<\/li>\n<li>Till majonn\u00e4sen kn\u00e4cker du \u00e4gget i beh\u00e5llaren till en stavmixer. Klicka i senap tillsammans med salt och oljan. Skiva ner vitl\u00f6ken. S\u00e4tt mixerstaven i beh\u00e5llarens botten, k\u00f6r ig\u00e5ng och dra staven upp\u00e5t. Vitl\u00f6ksmajonn\u00e4sen ska vara tjock, kr\u00e4mig och blank.<\/li>\n<li>Servera s\u00e5serna tillsammans med potatisen. Allt p\u00e5 en och samma pl\u00e5t eller tallrik som p\u00e5 bilden \u00e4r ett tips.<\/li>\n<\/ol>\n<p>\u00c4r vi bara familjen vid bordet \u00e4ter vi direkt fr\u00e5n pl\u00e5ten och dippar i s\u00e5serna.
