Mustig, s\u00f6t och rik. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>L\u00f6k! Kanske den r\u00e5vara jag uppskattar allra mest. F\u00f6r att den lyfter s\u00e5 m\u00e5nga r\u00e4tter till h\u00f6gre h\u00f6jder och utg\u00f6r basen till s\u00e5 mycket gott. Men den kan mer \u00e4n s\u00e5. Beroende p\u00e5 hantering agerar den bas eller topp.<\/p>\n<p>Skala, hacka och stek en l\u00f6k. En instruktion som \u00e4r inledningen till recept efter recept. F\u00f6rvandlingen \u00e4r total och den som tar sig tid f\u00e5r uppleva \u00f6verg\u00e5ngen fr\u00e5n det skarpa ettrigt l\u00f6kiga till mustig, len s\u00f6tma.<\/p>\n<p>Knepet \u00e4r tid. Resultatet \u00e4r guld och kan anv\u00e4ndas till mycket. Se framf\u00f6r dig en perfekt gr\u00e4ddad pizzabotten, en bianca, med god ost, kanske lite knaprigt fl\u00e4sk och gyllenbrynt l\u00f6k.<\/p>\n<p>Eller t\u00e4nk gryta, vilt kanske eller en vegetarisk med l\u00f6karna som avslutande topping. Eller varf\u00f6r inte l\u00e5ta dem bli en del av en h\u00f6stsallad. Den mjuka rika l\u00f6ken tillsammans med strimlad k\u00e5l, \u00e4pple, n\u00f6tter, baconstr\u00f6ssel och s\u00e5 vidare.<\/p>\n<p>T\u00e4nk l\u00f6kkr\u00e4m. Mixa de s\u00f6tmustiga l\u00f6karna och g\u00f6r en s\u00e5s, en soppa eller en pur\u00e9. Pur\u00e9n kan anv\u00e4ndas till mycket och jag f\u00f6resl\u00e5r att du testar att blanda den i f\u00e4rsbiffar. Kombinera m\u00f6jligen med riven eller riktigt finhackad r\u00e5 l\u00f6k.<\/p>\n<p>Och varf\u00f6r schalottenl\u00f6k? F\u00f6r att den \u00e4r l\u00f6kv\u00e4rldens rolls. En charmant bekantskap, med en l\u00e4tt parfymerad ton. S\u00e5 mycket mer \u00e4n l\u00f6kl\u00f6k, \u00e4ven om jag \u00e4r en fan av all l\u00f6k och absolut inte vill f\u00f6rringa n\u00e5gon.<\/p>\n<p>En schalott har oftast en ljuvligt ljust lila ton och en f\u00f6rfinad smak. Den \u00e4r uppbyggd av tunna lager som g\u00f6r att den kan hackas extremt fint. Samma princip g\u00e4ller som f\u00f6r all l\u00f6k. Hacka och \u00e4t i samma stund. V\u00e4ntan \u00e4r den f\u00e4rska hackade l\u00f6kens fiende. Den tappar snart sin blommiga fr\u00e4sch\u00f6r och blir unket fadd.<\/p>\n<p>L\u00e5ng tid \u00e4r d\u00e4remot precis det som g\u00f6r den brynta schalottenl\u00f6ken till en exklusiv r\u00e4tt. Men h\u00e5ll ner v\u00e4rmen som annars riskerar att plocka fram beska.<\/p>\n<h2>Gyllenbrynt schalottenl\u00f6k<\/h2>\n<ul>\n<li>500 g schalottenl\u00f6k<\/li>\n<li>50 g sm\u00f6r<\/li>\n<li>en nypa timjan, eller ett par kvistar<\/li>\n<li>1 tsk socker<\/li>\n<li>\u00bd tsk salt<\/li>\n<li>2 msk vatten<\/li>\n<\/ul>\n<ol>\n<li>Skala l\u00f6karna och stek dem varsamt till fin f\u00e4rg i sm\u00f6ret. H\u00e5ll ner v\u00e4rmen s\u00e5 att inte sm\u00f6ret br\u00e4nner. L\u00e4gg i timjan och str\u00f6 \u00f6ver socker. V\u00e4nd varsamt och v\u00e4nta en halv minut, inte mer, f\u00f6r extra fin f\u00e4rg. Inte br\u00e4nna, bara bryna.<\/li>\n<li>Forts\u00e4tt med salt och vatten. L\u00e4gg p\u00e5 ett lock och puttra l\u00e5ngsamt l\u00f6karna helt mjuka. Kanske beh\u00f6vs ytterligare n\u00e5gon matsked vatten. Avsluta tillagningen med att lyfta p\u00e5 locket och l\u00e5ta vattnet \u00e5nga bort.<\/li>\n<\/ol>\n<p>L\u00f6kintresserad?
