Vackert skurna racks eller en m\u00f6r skiva rostbiff. Eller varf\u00f6r inte f\u00e4rsbiffar! Och till det en variation p\u00e5 pumpa, s\u00e5 ser min grundid\u00e9 ut. Perfekt till h\u00f6stiga helger i ant\u00e5gande.<\/p>\n<p>Mitt f\u00f6rh\u00e5llande till pumpa \u00e4r gott. Jag gillar s\u00f6tman och jag gillar att den \u00e4r s\u00e5 enkel att tillaga. Allra b\u00e4st \u00e4r min egenodlade butternut som g\u00e5r under sortnamnet Waltham.<\/p>\n<p>N\u00e4r jag \u00f6ppnade en h\u00e4romdagen doftade k\u00f6ket fruktigt, lite som melon. Och f\u00e4rgen! Sinnebilden av orange och mycket vacker.<\/p>\n<p>Jag tillagade den p\u00e5 tre s\u00e4tt och tanken \u00e4r att de olika varianterna ska hamna p\u00e5 samma tallrik. F\u00f6r att det \u00e4r s\u00e5 kul att presentera vad man kan \u00e5stadkomma med en och samma gr\u00f6nsak. F\u00f6r avancerat kan man tycka, men det h\u00e4r \u00e4r garanterat enkelt.<\/p>\n<p>P\u00e5 bilden \u00e4r pumpan k\u00f6ttbitens enda tillbeh\u00f6r, men jag t\u00e4nker mig att n\u00e5got med k\u00e5l har en given plats p\u00e5 tallriken. Men vill du f\u00f6rdela p\u00e5 annat s\u00e4tt s\u00e5 g\u00e5r det alldeles utm\u00e4rkt.<\/li>\n<\/ol>\n<h2>Picklad pumpa<\/h2>\n<ul>\n<li>cirka 300 g butternutpumpa<\/li>\n<\/ul>\n<h4>Lag<\/h4>\n<ul>\n<li>1 dl \u00e4ttika<\/li>\n<li>2 dl socker<\/li>\n<li>2 dl vatten<\/li>\n<li>\u00bd tsk salt<\/li>\n<li>1 kanelst\u00e5ng<\/li>\n<li>1 bit f\u00e4rsk ingef\u00e4ra<\/li>\n<li>4 kryddnejlikor<\/li>\n<\/ul>\n<ol>\n<li>Skiva pumpan supertunt med en mandolin eller en osthyvel.<\/li>\n<li>L\u00e4gg alla ingredienser till lagen i en kastrull. Koka upp och l\u00e4gg i pumpaskivorna. L\u00e5t sm\u00e5puttra 5 minuter, eller lite mindre. Pumpan ska ha kvar krispet. Ta av och l\u00e5t svalna.<\/li>\n<\/ol>\n<h2>Rostad pumpa<\/h2>\n<ul>\n<li>cirka 1200 g butternutpumpa<\/li>\n<li>olivolja<\/li>\n<li>salt<\/li>\n<li>rosmarin<\/li>\n<\/ul>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 225 grader. Sk\u00e4r pumpan i t\u00e4rningar. L\u00e4gg p\u00e5 en pl\u00e5t, ringla \u00f6ver olja, salta och v\u00e4nd runt. Str\u00f6 eventuellt \u00f6ver lite rosmarin.<\/li>\n<li>Rosta i ugn tills bitarna f\u00e5r fin f\u00e4rg och \u00e4r helt mjuka.<\/li>\n<li>Ta undan s\u00e5 mycket som du vill servera som t\u00e4rningar, resten mixas till len pumpakr\u00e4m.<\/li>\n<\/ol>\n<h2>Pumpakr\u00e4m<\/h2>\n<ul>\n<li>cirka 600 g ugnsrostad pumpa<\/li>\n<li>2 \u2013 3 msk cr\u00e8me fraiche<\/li>\n<li>25 g sm\u00f6r<\/li>\n<li>salt<\/li>\n<\/ul>\n<ol>\n<li>L\u00e4gg de rostade pumpat\u00e4rningarna i en mixer, eller \u00e4nnu hellre i en blender. Klicka i cr\u00e8me fraiche, sm\u00f6r och salt. K\u00f6r till len kr\u00e4m, smaka av s\u00e4ltan.<\/li>\n<li>En variant p\u00e5 pumpakr\u00e4men \u00e4r att anv\u00e4nda gr\u00e4dde ist\u00e4llet f\u00f6r cr\u00e8me fraiche. V\u00e4rm den och sm\u00e4lt en n\u00e4ve lagrad ost i innan du k\u00f6r den med pumpan, lite sm\u00f6r och salt i blendern.<\/li>\n<\/ol>\n<p>Jag serverar lammracks till. Och en kraftfull skys\u00e5s. H\u00e4r kommer ett snabbrecept: Skiva 3 skalade vitl\u00f6ksklyftor. Stek l\u00e4tt i en kastrull tillsammans med 1 msk tomatpur\u00e9 och en gener\u00f6s nypa svartpeppar. Tills\u00e4tt 1 msk balsamvin\u00e4ger, 1 \u00bd msk koncentrerad kalvfond och 1 dl vatten. \u00a0Sjud ihop n\u00e5gra minuter till h\u00f6g smak. N\u00e5gra msk som en spegel under racksen.
