En krispig, gyllne, karamelliserad yta omsluter en kr\u00e4migt, mjuk k\u00e4rna. Ingredienserna \u00e4r enkla: Potatis, l\u00f6k och salt. L\u00e5ter simpelt, \u00e4r magiskt gott. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Jag kan inte sl\u00e4ppa potatisen. Den \u00e4ger. S\u00e5 m\u00e5nga m\u00f6jligheter som d\u00f6ljer sig innanf\u00f6r skalet p\u00e5 ingrediensen som finns i kylen hos de flesta. Verkligen en basvara. En med enorm potential.<\/p>\n<p>H\u00e4r kommer den i en version med schweiziskt ursprung. Lite oklar historia, men den l\u00e4r ha serverats p\u00e5 frukostbordet. Vi har adopterat r\u00e4tten som ofta bjuds med bacon och sylt som s\u00e4llskap. Den kan lika g\u00e4rna komma som pommes, som len potatispur\u00e9 eller som dessertkaka..?! Jo absolut! Ni f\u00e5r inte missa den, Kronans kaka. En liten delikatess. Recept i l\u00e4nken nedan.<\/figcaption><\/figure>\n<p>Det h\u00e4r \u00e4r ett av m\u00e5nga exempel p\u00e5 hur en simpel r\u00e5vara kan h\u00f6jas till gourmet med omsorg och noggrannhet. Potatis och l\u00f6k rymmer b\u00e5da fantastisk smak och struktur bara man vet hur de ska aktiveras.<\/p>\n<p>I det h\u00e4r fallet handlar det om att riva grovt, pressa ut v\u00e4tska och steka i gener\u00f6st med fett. Vi vill \u00e5t den perfekta ytan utan att riskera att r\u00f6stin fastnar. Viktigt ocks\u00e5 att riva b\u00e5de potatis och l\u00f6k strax innan de ska ner i pannan. De kan inte v\u00e4nta. Potatisen oxiderar och blir gr\u00e5. L\u00f6ken f\u00f6rlorar snabbt i smak.<\/p>\n<p>Eftersom jag vill att den ska vara rakt genom tillagad f\u00e5r den g\u00e5 klart i ugn. Och nu till verket!<\/p>\n<h2>R\u00f6sti \u2013 gyllene potatiskaka<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>1 kg potatis<\/li>\n<li>1 gul l\u00f6k<\/li>\n<li>salt<\/li>\n<li>3 msk rapsolja<\/li>\n<\/ul>\n<h4>Tillbeh\u00f6r<\/h4>\n<ul>\n<li>200 g r\u00f6kt fl\u00e4sk<\/li>\n<li>2 \u00e4pplen<\/li>\n<li>svart vinb\u00e4rs- eller lingonsylt<\/li>\n<\/ul>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 150 grader. Skala potatis och l\u00f6k. Riv p\u00e5 rivj\u00e4rnets grova sida. Salta och l\u00e5t ligga ett par minuter i durkslag. Pressa ur s\u00e5 mycket v\u00e4tska som m\u00f6jligt.<\/li>\n<li>Hetta upp olja i en stekpanna. L\u00e4gg i potatis- och l\u00f6kblandningen och tryck ihop med stekspade till en j\u00e4mn kaka. Kika f\u00f6rsiktigt p\u00e5 undersidan och n\u00e4r kakan h\u00e5ller ihop och f\u00e5tt fin f\u00e4rg ska den v\u00e4ndas med hj\u00e4lp av en flat tallrik.<\/li>\n<li>Bryn andra sidan och st\u00e4ll sedan in i ugnen f\u00f6r att g\u00e5 klart. R\u00f6stin ska vara mjuk och helt tillagad rakt genom.<\/li>\n<li>T\u00e4rna fl\u00e4sket och stek det till fin f\u00e4rg. St\u00e4ll \u00e5t sidan och stek \u00e4pplet som f\u00f6rst k\u00e4rnas ur och sk\u00e4rs i klyftor.<\/li>\n<li>Ta r\u00f6stin ur ugnen och servera med knaprigt fl\u00e4sk, \u00e4ppelklyftor och sylt.<\/li>\n<\/ol>\n<p>Dessertkaka med potatis som b\u00e4rande ingrediens kan k\u00e4nnas m\u00e4rkligt och helt fel, men <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/kronans-kaka-en-potatishyllning\/\">Kronans kaka! Ni m\u00e5ste prova!<\/a> Potatisen ger struktur och g\u00f6r kakan saftig. Den som f\u00e5r chans att gissa inneh\u00e5llet kommer aldrig att pricka in potatis. En annan ov\u00e4ntad kakingrediens \u00e4r svarta b\u00f6nor. Ger struktur utan att ta \u00f6ver smakm\u00e4ssigt.
