Ingen k\u00e4nns vid den \u00e5ngande potatisen, perfekt att servera till en stekt korv, en bit panerad fisk eller ett par klyftor ugnsrostad k\u00e5l.<\/p>\n<p>Allts\u00e5 \u00e4nnu angel\u00e4gnare att h\u00e5lla fram den i ljuset. Potatismos \u00e4r inte som man f\u00f6rst kan tro en sak. Den kan serveras i m\u00e5nga varianter fr\u00e5n den vardagligt mj\u00f6lkvispade till lyxig, helt sl\u00e4t sm\u00f6rdoftande pur\u00e9.<\/p>\n<p>Stompad potatis \u00e4r en variant som passar s\u00e4rskilt bra att smaks\u00e4tta. Ett grovst\u00f6tt mos. G\u00e4rna med bitar kvar. Och mycket g\u00e4rna i s\u00e4llskap av cr\u00e9me fraiche och sm\u00f6r. Inga m\u00e4ngder, men tillr\u00e4ckligt f\u00f6r att lyfta smaken av potatis och b\u00e4dda f\u00f6r ytterligare smaks\u00e4ttning.<\/p>\n<p>Ost till stomp \u00e4r klockrent. Riven ska den vara f\u00f6rst\u00e5s. Baconstr\u00f6ssel! Stekt svamp, eller en rej\u00e4l n\u00e4ve f\u00e4rska \u00f6rter. Till dagens r\u00e4tt blir det pepparrot och senap. Mycket fin kombo och tv\u00e5 av potatisens verkliga smakkamrater.<\/p>\n<h2>Potatisstomp med pepparrots- och senapssting<\/h2>\n<p>4 personer<\/p>\n<p>800 g potatis<\/p>\n<ul>\n<li>1 \u00bd dl cr\u00e8me fraiche<\/li>\n<li>\u00bd msk sk\u00e5nsk senap<\/li>\n<li>2 msk rumsvarmt sm\u00f6r<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<li>2 \u2013 3 msk f\u00e4rskriven pepparrot<\/li>\n<li>finhackad persilja<\/li>\n<\/ul>\n<ol>\n<li>Skala och koka potatisen i saltat vatten. H\u00e4ll av och l\u00e5t \u00e5nga en stund. St\u00f6t potatisen till ett grovt mos. Det ska vara tydliga bitar kvar.<\/li>\n<li>Blanda cr\u00e8me fraiche och senap. V\u00e4nd ner blandningen tillsammans med sm\u00f6ret, salt och peppar i den heta potatisen.
