Runt gnocchin samlas svamp, l\u00f6k, k\u00e5l, timjan, svartpeppar och lagrad ost. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Pasta eller potatis? Potatis eller pasta? Varf\u00f6r v\u00e4lja. Gnocchi \u00e4r den perfekta kombinationen. Av bland annat pressad kokt potatis och mj\u00f6l blandar jag snabbt ihop en deg, sk\u00e4r i bitar och s\u00e4tter en mig n\u00e4rst\u00e5ende liten kille p\u00e5 att trycka till bitarna med en gaffel. Teamwork n\u00e4r det \u00e4r som b\u00e4st.<\/p>\n<p>Kokar sedan hastigt och steker genast till fin f\u00e4rg. L\u00e5ter det kr\u00e5ngligt? Eller strunta i det och k\u00f6r bara.<\/p>\n<p>B\u00e4sta s\u00e4ttet att ta sig an r\u00e4tter med flera moment \u00e4r att s\u00e4tta sig in i restaurangbegreppet mise en place. Inneb\u00f6rden \u00e4r ungef\u00e4r: T\u00e4nk innan du s\u00e4tter ig\u00e5ng. Ha koll p\u00e5 vad som ska g\u00f6ras och plocka fram allt innan du startar.<\/p>\n<p>Bara att s\u00e4tta ig\u00e5ng allts\u00e5 : )<\/p>\n<h2>Kantarellgnocchi<\/h2>\n<p>4 personer<\/p>\n<ol>\n<li>1 kg potatis av mj\u00f6lig sort<\/li>\n<li>150 g vetemj\u00f6l<\/li>\n<li>\u00bd tsk salt<\/li>\n<li>2 \u00e4ggulor<\/li>\n<li>potatismj\u00f6l<\/li>\n<\/ol>\n<h4>Tillbeh\u00f6r<\/h4>\n<ul>\n<li>1 l kantareller, ca 250 g (eller annan svamp)<\/li>\n<li>200 g gr\u00f6n- eller savoyk\u00e5l<\/li>\n<li>12 sm\u00e5 stekl\u00f6kar<\/li>\n<li>timjan, f\u00e4rsk eller torkad<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<li>1 \u00bd dl riven, lagrad ost<\/li>\n<\/ul>\n<ol>\n<li>Skala och koka potatisen mjuk i saltat vatten. L\u00e5t den svalna n\u00e5got innan den pressas i en potatispress.<\/li>\n<li>Blanda snabbt potatis, mj\u00f6l, salt och \u00e4ggulor till en deg som delas i fyra bitar. Pudra med potatismj\u00f6l och rulla till korvar med en dryg cm i diameter. Sk\u00e4r i bitar om ett par cm. Tryck till varje gnocchi l\u00e4tt med en gaffel.<\/li>\n<li>Koka upp rikligt med saltat vatten i en kastrull och koka gnocchin i ett par omg\u00e5ngar. De kommer sjunka f\u00f6r att stiga upp till ytan n\u00e4r de \u00e4r klara. Ta upp med h\u00e5lslev och l\u00e5t dem rinna av.<\/li>\n<li>Hetta upp olja i en panna och stek den kokta gnocchin till fin f\u00e4rg och krispig yta. L\u00e4gg \u00e5t sidan.<\/li>\n<li>Ansa och stek kantarellerna. Koka samtidigt upp vatten i en kastrull. Koka den ansade k\u00e5len och skalade l\u00f6ken ett par minuter. L\u00e5t rinna av innan l\u00f6ken halveras och steks tillsammans med k\u00e5len vid sidan av kantarellerna.<\/li>\n<li>Krydda med timjan, salt och peppar. V\u00e4nd ner gnocchin och servera med riven ost.<\/li>\n<\/ol>\n<p>\u00c4n finns det kantareller i m\u00e5nga butiker, b\u00e5de gula och trattisar. Annars funkar det fint med annan svamp.
