Bullar \u00e4r underbart, men den har s\u00e5 mycket mer att erbjuda. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Jag t\u00e4nker bulle, advent och lucia. Associationerna g\u00e5r genast till fikabordet fast jag vet att d\u00e4r finns mer att h\u00e4mta. Saffran har en betydligt st\u00f6rre repertoar. Kopplingen till s\u00f6tt och jul \u00e4r stark h\u00e4r, men kikar man s\u00f6derut s\u00e5 \u00f6ppnar sig en gyllengul v\u00e4g in till det salta k\u00f6ket.<\/p>\n<p>F\u00f6rst vill jag varna. Det blir l\u00e4tt f\u00f6r mycket. Saffran \u00e4r en b\u00e5de elegant och burdus rackare med tendens att bli dominant. I s\u00f6tebr\u00f6d funkar det att sl\u00e4ppa p\u00e5 tyglarna, men annars f\u00e5r man vara h\u00e5rd och s\u00e4tta en gr\u00e4ns f\u00f6r att f\u00e5 balans.<\/p>\n<p>Och smaken d\u00e5? Hur kan den beskrivas? Jag v\u00e4nder mig till en av mina gurus n\u00e4r det kommer till smaker, Lisa F\u00f6rare Winbladh. F\u00f6r \u00f6vrigt hade jag sk\u00e4nkt mycket f\u00f6r att n\u00e4rvara under provningen n\u00e4r den h\u00e4r smakbilden togs fram. Eller vad s\u00e4ger ni!?<\/p>\n<p>\u201dEn komplex jordig och blommig s\u00f6tma med drag av jod, maskros, honung, sandel, koppar, kastanj, f\u00e4rskt h\u00f6, torkad pomerans, \u00e4ggtoddy, gurkmeja, renfana, ginseng, kamomill, torra lavar..\u201d<\/p>\n<p>Till framf\u00f6randet av denna symfoni ska en stadig orkester plockas ihop. En som h\u00e5ller samman och adderar balans. H\u00e4r presenteras en ensemble som dock inte ska engageras alla p\u00e5 en g\u00e5ng utan dirigeras med sans och f\u00f6rnuft:<\/p>\n<p><strong>Citrus, b\u00e5de apelsin och citron. Tomat, f\u00e4nk\u00e5l, l\u00f6k och vitl\u00f6k. Vitt vin och skaldjur. Kik\u00e4rtor och chili. Ris och couscous. En tomatdoftande gryta p\u00e5 kalvl\u00e4gg. Jag l\u00e5nade principen till en kycklinggryta. En lyckad rockad. Receptet i l\u00e4nk ovan.<\/figcaption><\/figure>\n<p>N\u00e5gon kommer hoppa h\u00f6gt av id\u00e9n med risotto p\u00e5 gr\u00f6tris, och jaja det \u00e4r inte samma sak. Inte lika f\u00f6rn\u00e4mligt, men det funkar absolut. Ett rundkornigt, st\u00e4rkelserikt ris som ger en fin, kr\u00e4mig risotto.<\/p>\n<h2>Saffransrisotto<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>1 schalottenl\u00f6k<\/li>\n<li>olivolja + sm\u00f6r<\/li>\n<li>3 \u00bd dl risotto- eller gr\u00f6tris<\/li>\n<li>1 \u00bd dl vitt vin<\/li>\n<li>1 l kyckling- eller gr\u00f6nsaksbuljong<\/li>\n<li>3\/4 &#8211; 1 paket saffran (0,5 g)<\/li>\n<li>25 g rumstempererat sm\u00f6r<\/li>\n<li>riven, lagrad ost, g\u00e4rna parmesan<\/li>\n<\/ul>\n<ol>\n<li>Skala och finhacka l\u00f6ken. Hetta upp olja i en tjockbottnad kastrull eller gryta. Inte f\u00f6r varmt. L\u00e4gg i l\u00f6ken och l\u00e5t riset och en klick sm\u00f6r f\u00f6lja med efter n\u00e5gon minut. Stek p\u00e5 medelv\u00e4rme under omr\u00f6rning n\u00e5gra minuter utan att det tar f\u00e4rg.<\/li>\n<li>H\u00e4ll p\u00e5 vinet som f\u00e5r koka in. Koka upp buljongen som ska vara het n\u00e4r du b\u00f6rjar r\u00f6ra ner den i risotton. Lite i taget. H\u00e4ll p\u00e5, r\u00f6r, h\u00e4ll p\u00e5, r\u00f6r och s\u00e5 vidare. Saffranet r\u00f6r du i tillsammans med en av buljongskv\u00e4ttarna.<\/li>\n<li>R\u00e4kna med att det tar 16 \u2013 20 minuter innan riset \u00e4r mjukt med en trevlig aningen bitig k\u00e4rna kvar. Och obs! risotton ska vara kr\u00e4mig p\u00e5 gr\u00e4nsen till rinnig.<\/li>\n<li>R\u00f6r i sm\u00f6ret tillsammans med en liten n\u00e4ve av den rivna osten.
