R\u00e4kans h\u00f6gs\u00e4song \u00e4r h\u00e4r och jag g\u00f6r mitt b\u00e4sta f\u00f6r att ge dem all uppskattning de \u00e4r v\u00e4rda. Idag blir det pasta. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Jag l\u00e4ngtar. Samtidigt som jag \u00e4r h\u00e4r och nu. Och m\u00e5let \u00e4r alltid att pricka in b\u00e4sta tiden. Just nu har vi Skreien p\u00e5 ing\u00e5ng och vid sidan av den januarir\u00e4korna. Visst de finns \u00e5ret om, men allra b\u00e4st \u00e4r de just i detta nu.<\/p>\n<p>Oftast \u00e4ter jag dem bara rakt upp och ner. Vid sidan ett gott br\u00f6d, hemgjord majonn\u00e4s, citron och tabasco. Inget mer. Ibland hamnar de <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/rakmackans-dag-basta-macktipsen\/\">i en r\u00e4kmacka<\/a> och ibland <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/asiatisk-raksallad\/\">i en asiatisk sallad<\/a>.<\/p>\n<p>D\u00e5 och d\u00e5 bjuds de in till det varma k\u00f6ket. Inte lika ofta eftersom r\u00e4kor \u00e4r v\u00e4rmek\u00e4nsliga rackare. Ett \u00f6gonblick f\u00f6r l\u00e4nge i hettan och allt \u00e4r f\u00f6rg\u00e4ves. De drar ihop sig och blir ohj\u00e4lpligt sega. D\u00e4rf\u00f6r mina v\u00e4nner g\u00e4ller st\u00f6rsta m\u00f6jliga f\u00f6rsiktighet i alla r\u00e4tter som samtidigt inkluderar r\u00e4kor och v\u00e4rme.<\/p>\n<p>Idag blir det en pastar\u00e4tt som bygger p\u00e5 tomatbas. Jag har den fantastiska f\u00f6rm\u00e5nen att ha frysen full med f\u00f6rra \u00e5rets tomatsk\u00f6rd. Tomater av alla sorter infrusna i p\u00e5sar \u00e1 400 g. Lika mycket som en burk tomater. I mina frysp\u00e5sar d\u00f6ljer sig en smak av mogen sommar som b\u00e4st st\u00e4mmer \u00f6verens med k\u00f6rsb\u00e4rstomater p\u00e5 burk. Lite dyrare, men s\u00e5 v\u00e4rt de extra kronorna i alla fall i den h\u00e4r r\u00e4tten.<\/p>\n<p>Jag b\u00f6rja med tomats\u00e5sen, sen kokar jag pasta och skalar r\u00e4korna. Till sist, alldeles innan servering v\u00e4nder jag ner r\u00e4korna i s\u00e5sen och vips blandar jag allt och springer in till bordet. Resultatet \u00e4r perfekt!<\/p>\n<p>Det kan vara bra att veta att cirka 60 % av hela r\u00e4kor f\u00f6rsvinner bort i skal. Om 600 g l\u00e5ter mycket s\u00e5 finns svaret d\u00e4r. Spara f\u00f6rresten skalet till ett fondkok. Den ultimata starten p\u00e5 en fantastisk soppa. Och hinner du inte direkt s\u00e5 kan skalen frysas.<\/p>\n<h2>R\u00e4kpasta<\/h2>\n<p>4 (-5) personer<\/p>\n<ul>\n<li>500 g pasta, linguine eller spagetti<\/li>\n<li>600 g f\u00e4rska r\u00e4kor<\/li>\n<li>1 gul l\u00f6k<\/li>\n<li>2 \u2013 3 vitl\u00f6ksklyftor<\/li>\n<li>2 msk tomatpur\u00e9<\/li>\n<li>1 \u00bd dl vitt vin<\/li>\n<li>600 g tomater, frysta eller k\u00f6rsb\u00e4rs fr\u00e5n burk<\/li>\n<li>\u00bd tsk socker<\/li>\n<li>1 nypa chiliflakes<\/li>\n<li>salt<\/li>\n<li>75 gram sm\u00f6r<\/li>\n<li>eventuellt blad av f\u00e4rsk basilika<\/li>\n<\/ul>\n<ol>\n<li>Finhacka l\u00f6k och vitl\u00f6k. H\u00e4ll olivolja i en gryta och fr\u00e4s p\u00e5 relativt l\u00e5g v\u00e4rme. R\u00f6r ner tomatpur\u00e9n som f\u00e5r fr\u00e4sa med n\u00e5gon minut.<\/li>\n<li>H\u00e4ll p\u00e5 vinet och l\u00e5t det puttra en liten stund innan tomaterna h\u00e4lls p\u00e5. Krydda med socker, chili och salt. L\u00e5t tomaterna koka sakta under tiden som du kokar pasta och skalar r\u00e4kor.<\/li>\n<li>Ta s\u00e5sen fr\u00e5n plattan och klicka i sm\u00f6ret. Japp, 75 gram st\u00e4mmer och du kommer f\u00f6rst\u00e5 varf\u00f6r : )<\/li>\n<li>V\u00e4nd ner r\u00e4korna och blanda i pastan. Toppa med basilikablad om du vill .
