En liten tillbakablick in i 80-talet. Och in i framtiden f\u00f6r den gula curryn kommer tillbaka. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Det doftar fantastiskt. Jag fattar inte varf\u00f6r den f\u00f6rsvann, den vackert gula curryblandningen. Under en period stod den stadigt i kryddhyllan hos de flesta, men sen&#8230;pass\u00e9 och bortgl\u00f6md.<\/p>\n<p>Jag l\u00e4ser, koriander, gurkmeja, bockhornskl\u00f6ver, cayennepeppar, spiskummin, f\u00e4nk\u00e5l och svartpeppar p\u00e5 burken. Korianderfr\u00f6et ger en aromatisk citruston, gurkmejan st\u00e5r f\u00f6r den gula f\u00e4rgen, och bockhornskl\u00f6vern f\u00f6r mycket av den speciella doften. Sedan backar de \u00f6vriga upp och tillsammans \u00e4r det en samspelt orkester.<\/p>\n<p>Gul curry har en indisk bakgrund, men den har aldrig varit en del av det indiska k\u00f6ket. Det h\u00e4r \u00e4r en brittisk historia. Ett herrefolk som \u00f6nskade ta med en bit av den indiska smakpaletten hem och vidare ut i v\u00e4rlden. En indisk\u201dish\u201d kryddblandning som sedan tilltalat m\u00e5nga. Inte minst oss. H\u00e5ll med om att det vilar en k\u00e4nsla av husmanskost \u00f6ver gult currypulver.<\/p>\n<p>M\u00e5nga \u00e4r r\u00e4tterna som pudrats gula och inte s\u00e4llan i s\u00e4llskap av banan, jordn\u00f6tter och ananas. Det skippar vi idag, men lite s\u00f6tma och syra \u00e4r faktiskt ingen dum id\u00e9 i sammanhanget. Min r\u00e4tt f\u00e5r en f\u00e5r en knappt m\u00e4rkbar s\u00f6tsyrlig ton av fint, t\u00e4rnat \u00e4pple. Och h\u00e4r kommer receptet.<\/p>\n<h2>Laxcurry<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>\u00a0600 g laxfil\u00e9<\/li>\n<li>1 gul l\u00f6k<\/li>\n<li>1 \u2013 2 vitl\u00f6ksklyftor<\/li>\n<li>1 r\u00f6d paprika<\/li>\n<li>1 litet \u00e4pple<\/li>\n<li>1 \u00bd msk gul curry<\/li>\n<li>2 \u00bd dl vispgr\u00e4dde<\/li>\n<li>1 \u00bd dl vatten<\/li>\n<li>\u00bd t\u00e4rning kyckling- eller gr\u00f6nsaksbuljong<\/li>\n<li>salt<\/li>\n<li>3 dl babyspenat (40 g)<\/li>\n<\/ul>\n<ol>\n<li>Sk\u00e4r den skinnfria laxfil\u00e9n i stora t\u00e4rningar. Salta l\u00e4tt och st\u00e4ll \u00e5t sidan.<\/li>\n<li>Finhacka l\u00f6k och vitl\u00f6k. T\u00e4rna paprika och \u00e4pple sm\u00e5tt.<\/li>\n<li>Hetta upp olja i en tjockbottnad kastrull. Stek l\u00f6k, vitl\u00f6k, paprika och \u00e4pple p\u00e5 relativt l\u00e5g v\u00e4rme. Pudra i currypulvret, r\u00f6r om och l\u00e5t fr\u00e4sa n\u00e5gra minuter.<\/li>\n<li>H\u00e4ll p\u00e5 gr\u00e4dde och vatten. Smula i buljongen och sm\u00e5koka s\u00e5sen tills den b\u00f6rjar tjockna n\u00e5got. smaka av med salt och ta fr\u00e5n plattan.<\/li>\n<li>Stek laxkuberna i panna till fin f\u00e4rg. H\u00e4ll varsamt s\u00e5sen i pannan och puttra n\u00e5gra minuter. L\u00e4gg i spenaten och l\u00e5t den koka ihop n\u00e5gon minut innan r\u00e4tten st\u00e4lls fram p\u00e5 bordet.<\/li>\n<li>Serveras g\u00e4rna tillsammans med luftigt ris, broccoli och \u00e4rtor.<\/li>\n<\/ol>\n<p>Lax har blivit vardagsmat och i takt med att m\u00e5nga v\u00e4ljer fisk har den b\u00f6rjat agera ers\u00e4ttare i r\u00e4tter vi g\u00e4rna serverar.
