Det blir en riktig lyxmiddag p\u00e5 vegotema. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Ofta lite f\u00f6r svampig. Halvstekt med uppgift att&#8230;ja vad\u00e5? Jag f\u00e5r en k\u00e4nsla av att &#8221;det stod i receptet s\u00e5 d\u00e4rf\u00f6r kom den med&#8221;. Synd p\u00e5 en r\u00e5vara som har s\u00e5 mycket potential. Och en som vi har tillg\u00e5ng till \u00e5ret om. Odlade champinjoner \u00e4r verkligen en skatt.<\/p>\n<p>Vissa svampar g\u00f6r mig os\u00e4ker. Och i det l\u00e4get l\u00e4mnade jag svampkorgen hemma.<\/p>\n<p>Varf\u00f6r riskera det? S\u00e4rskilt som det finns odlade av b\u00e4sta kvalitet och i stor variation. Mycket smak utan att bli &#8221;svampigt&#8221;.<\/figcaption><\/figure>\n<p>Svampen hyvlas oerh\u00f6rt tunt och sedan l\u00e4gger jag den i en stor panna satt\u00a0 p\u00e5 medelv\u00e4rme. Den ska svettas. Pannan fr\u00e4ser av v\u00e4tskan och n\u00e4r det blir tyst g\u00e5r jag p\u00e5 med salt och fett. F\u00f6rst rapsolja, sedan en klick sm\u00f6r. Skivorna f\u00e5r f\u00e4rg och k\u00f6ket doftar fantastiskt.<\/p>\n<p>M\u00e4ngden kan se galet stor ut i pannan, men det mesta \u00e4r vatten. Den vackert brynta svampen som blir kvar \u00e4r precis vad som beh\u00f6vs.<\/p>\n<p>Dags f\u00f6r risotto och n\u00e4r den \u00e4r klar r\u00f6r jag i h\u00e4lften av champinjonerna. Resten str\u00f6r jag \u00f6ver. Ljuvligt!<\/p>\n<h2><strong>Champinjonrisotto<\/strong><\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>250 g champinjoner, mycket tunt skivade, g\u00e4rna p\u00e5 mandolin<\/li>\n<li>2 schalottenl\u00f6kar, mycket fint hackade<\/li>\n<li>4 dl risottoris, arborio eller carnaroli<\/li>\n<li>2 dl vitt vin<\/li>\n<li>12 dl het svamp- eller kycklingbuljong<\/li>\n<li>2 msk sm\u00f6r<\/li>\n<li>2 dl riven, lagrad ost<\/li>\n<\/ul>\n<h4>Tillbeh\u00f6r<\/h4>\n<ul>\n<li>riven ost<\/li>\n<li>finhackad persilja<\/li>\n<\/ul>\n<ol>\n<li>L\u00e4gg svampen i en panna och st\u00e4ll p\u00e5 medelv\u00e4rme. L\u00e5t den svettas och n\u00e4r det mesta av v\u00e4tskan \u00e4r borta ska fettet i. F\u00f6rst lite rapsolja, sedan en klick sm\u00f6r. Salta och l\u00e5t svampen f\u00e5 fin f\u00e4rg utan att br\u00e4nnas.<\/li>\n<li>Stek l\u00f6ken i en tjockbottnad kastrull. Den ska inte ta f\u00e4rg. H\u00e4ll p\u00e5 riset och r\u00f6r om under ett par minuter.<\/li>\n<li>H\u00e4ll p\u00e5 vinet som f\u00e5r koka in och sp\u00e4d sedan med den heta buljongen. Lite i taget varvat med omr\u00f6rning. Sp\u00e4d och r\u00f6r, sp\u00e4d och r\u00f6r. V\u00e4tskan ska n\u00e4stan helt absorberas mellan skv\u00e4ttarna. R\u00e4kna med att hela processen tar 18 \u2013 20 minuter innan riset \u00e4r klart med en liten k\u00e4rna kvar. Och obs! risotton ska vara kr\u00e4mig. P\u00e5 gr\u00e4nsen till rinnig.<\/li>\n<li>R\u00f6r i sm\u00f6ret, osten och h\u00e4lften av svampen. Str\u00f6 resten av champinjonerna ovanp\u00e5 tillsammans med riven ost och eventuellt lite persilja.
