K\u00f6tt n\u00e5gon? Trodde inte det. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Det fanns en tid, f\u00f6r inte s\u00e5 l\u00e4nge sedan, n\u00e4r en vegetarisk m\u00e5ltid kunde avf\u00e4rdas som kaninmat. Det var d\u00e5. Idag ifr\u00e5gas\u00e4tter ingen <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/vegetarisk-lasagne-sa-gott-sa-ratt\/\">en vegetarisk lasagne<\/a>, en bolognese baserad p\u00e5 belugalinser eller <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/chili-sin-carne-gourmetvego-for-alla\/\">en chili sin carne<\/a>. Det \u00e4r vardagsmat.<\/p>\n<p>Lite trassligare \u00e4r det att bjuda p\u00e5 finare r\u00e4tter. En k\u00f6ttbit eller en v\u00e4lstekt laxskiva \u00e4r vi vana vid men en helt vegetarisk lyxmiddag..? Vi kan ju genast skippa id\u00e9n om att lyx kr\u00e4ver extra tjocka pl\u00e5nb\u00f6cker. Svartrot och rotselleri kommer inte att svida i kassan. Det h\u00e4r \u00e4r ist\u00e4llet lyx som bygger p\u00e5 extra omsorg. Mest v\u00e4rt? Jag vet vad jag tycker.<\/p>\n<p>Jag har n\u00e5gra tips. Det ska vara flera komponenter p\u00e5 tallriken. Ett antal olika strukturer och smaker. T\u00e4nk n\u00e5got kr\u00e4migt, n\u00e5got knaprigt, n\u00e5got frasigt, n\u00e5got rostat och n\u00e5got fr\u00e4scht krispigt. T\u00e4nk syra, s\u00f6tma, s\u00e4lta och umami. Kanske till och med ett uns beska.<\/p>\n<p>Tallriken ska bjuda \u00f6verraskningar och smaker som bryter mot varandra i harmoni. Visst l\u00e5ter det bra. Momenten kan k\u00e4nnas m\u00e5nga och kr\u00e5ngliga, men jag lovar att inget av det h\u00e4r \u00e4r sv\u00e5rt. Men t\u00e4nk \u00f6ver processen innan s\u00e5 att du timar de olika delarna. Vill du f\u00f6rbereda s\u00e5 g\u00e5r det fint att pickla \u00e4pple och rosta n\u00f6tter i god tid.<\/p>\n<p>L\u00e5t mig presentera en vegomiddag som platsar vid det festligare middagsbordet. Jag har delat upp ingredienslistan och instruktionerna efter varje del p\u00e5 tallriken. Det ser mycket och sv\u00e5rt ut, men inte alls. Vissa saker tar bara n\u00e5gon minut att fixa.<\/p>\n<h2>Vegetarisk lyxmiddag<\/h2>\n<p>4 personer<\/p>\n<h4>Picklat \u00e4pple<\/h4>\n<ul>\n<li>1 stort \u00e4pple<\/li>\n<li>1 msk \u00e4ttika 12%<\/li>\n<li>2 msk socker<\/li>\n<li>3 msk vatten<\/li>\n<\/ul>\n<h4>Ostdoftande rotselleripur\u00e9<\/h4>\n<ul>\n<li>500 g rotselleri<\/li>\n<li>300 g mj\u00f6lig potatis<\/li>\n<li>1 \u00bd dl gr\u00e4dde<\/li>\n<li>1 \u00bd dl lagrad, riven ost<\/li>\n<li>50 g sm\u00f6r<\/li>\n<li>salt<\/li>\n<li>peppar<\/li>\n<\/ul>\n<h4>Stekta svartr\u00f6tter<\/h4>\n<ul>\n<li>8 \u2013 12 stycken beroende p\u00e5 storlek<\/li>\n<\/ul>\n<h4>Svartk\u00e5lschips<\/h4>\n<ul>\n<li>4 gr\u00f6nk\u00e5lsblad<\/li>\n<\/ul>\n<h4>Brynt hasseln\u00f6tssm\u00f6r<\/h4>\n<ul>\n<li>1 dl hasseln\u00f6tter<\/li>\n<li>50 g sm\u00f6r<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<h4>Pickat \u00e4pple<\/h4>\n<ol>\n<li>K\u00e4rna ur, halvera och t\u00e4rna \u00e4pplet i sm\u00e5, fina t\u00e4rningar. Beh\u00e5ll skalet p\u00e5.<\/li>\n<li>Blanda \u00e4ttika, socker och vatten. L\u00e4gg \u00e4pple och lag i en sk\u00e5l. L\u00e5t st\u00e5 och dra.<\/li>\n<\/ol>\n<h4>Rotselleripur\u00e9<\/h4>\n<ol>\n<li>Skala rotselleri och potatis. Dela i bitar och koka i l\u00e4ttsaltat vatten. H\u00e4ll av vattnet och l\u00e5t \u00e5nga av i n\u00e5gon minut.<\/li>\n<li>V\u00e4rm gr\u00e4dden och r\u00f6r i osten som sm\u00e4lter snabbt. H\u00e4ll blandningen \u00f6ver rotfrukterna. Klicka i sm\u00f6ret och vispa till mos med en elvisp. Den som har en blender och vill ha en helt sl\u00e4t pur\u00e9 kan anv\u00e4nda den. Smaka av med salt och peppar.<\/li>\n<\/ol>\n<h4>Stekta svartr\u00f6tter<\/h4>\n<ol>\n<li>Skala svartr\u00f6tterna. Koka upp en kastrull med saltat vatten. Koka r\u00f6tterna 3 \u2013 5 minuter. L\u00e4gg upp p\u00e5 handduk f\u00f6r att torka.<\/li>\n<li>Hetta upp en blandning av sm\u00f6r och olja i en panna. Salta och stek r\u00f6tterna hastigt till fin f\u00e4rg.<\/li>\n<\/ol>\n<h4>Svartk\u00e5lschips och brynt hasseln\u00f6tssm\u00f6r<\/h4>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 175 grader. Sk\u00e4r bort det gr\u00f6vsta av k\u00e5lens mittersta bladnerv. Dela k\u00e5len i chipsstora bitar. Salta k\u00e5len l\u00e4tt och h\u00e4ll \u00f6ver lite olivolja. V\u00e4nd runt noga.<\/li>\n<li>L\u00e4gg k\u00e5l och n\u00f6tter p\u00e5 en pl\u00e5t. St\u00e4ll in i ugnen och l\u00e5t st\u00e5 10 \u2013 12 minuter tills k\u00e5len \u00e4r frasig och n\u00f6tterna doftar rostat.<\/li>\n<li>Bryn sm\u00f6ret i kastrull p\u00e5 medelv\u00e4rme till fin f\u00e4rg samtidigt som du vispar. Hacka n\u00f6tterna grovt och l\u00e4gg dem i sm\u00f6ret.<\/li>\n<li>L\u00e4gg tallrikar med pur\u00e9n i botten toppat av svartr\u00f6tter och \u00f6vriga delar.<\/li>\n<\/ol>\n<p>Vill du prova en liknande r\u00e4tt fast med r\u00f6dbetor, brysselk\u00e5l och pepparrot som inslag<a href=\"https:\/\/blogg.land.se\/skog-till-bord\/vegetariskt-nyar-sa-2019\/\"> s\u00e5 kika p\u00e5 inl\u00e4gget h\u00e4r<\/a>.
