Vi \u00e4r fortfarande inne i vinterpotatisens paradis. Och r\u00e4tt behandlad blir den ett v\u00e5rtecken. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Potatis \u00e4r verkligen mer \u00e4n en sak. Snart k\u00e4nner den v\u00e5ren i sig och sl\u00e4nger ut groddar i potatisl\u00e5dan. Just nu har vi den perfekta mosk\u00e4llan i kylen. En egenskap som f\u00f6rsvinner med den f\u00e4rska under v\u00e5ren. S\u00e5 l\u00e5t oss passa p\u00e5.<\/p>\n<p>\u201dVad blir det till middag?\u201d &#8211; den eviga fr\u00e5gan, s\u00e4rskilt med ugnar i huset. Jag brukade f\u00e5 svaret \u201dMat och potatis\u201d, som om potatisen var en sj\u00e4lvklar, men lite trist del av alla m\u00e5ltider. Den tiden \u00e4r f\u00f6rbi.<\/p>\n<p>Jag v\u00e4ljer noga bland sorterna. Bland olika smaker och egenskaper. Och till mos \u00e4r mandelpotatis favoriten. Lite trixig eftersom den l\u00e4tt kokar s\u00f6nder, men den som h\u00e5ller koll kan pricka tiden f\u00f6r exakt genomkokt utan sprickor.<\/p>\n<p>Moset blir lent och kr\u00e4migt. Inget sn\u00e5lande med gr\u00e4dde och en rej\u00e4l klick sm\u00f6r p\u00e5 slutet. Till det en n\u00e4ve lagrad ost, citroncest, riktigt fint skuren gr\u00e4sl\u00f6k och krasse. Och s\u00e5h\u00e4r g\u00e5r det till:<\/p>\n<h2>Ost- och citrondoftande potatismos<\/h2>\n<p>4 \u2013 5 personer<\/p>\n<ul>\n<li>1 kg mandelpotatis<\/li>\n<li>1 \u00bd dl gr\u00e4dde<\/li>\n<li>1 dl mj\u00f6lk<\/li>\n<li>75 g sm\u00f6r i kuber<\/li>\n<li>1 \u00bd dl riven ost, g\u00e4rna V\u00e4sterbottensost<\/li>\n<li>\u00bd citron, rivet skal + 1 \u2013 2 msk pressad saft<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<li>1 knippa gr\u00e4sl\u00f6k<\/li>\n<li>sm\u00f6rg\u00e5skrasse<\/li>\n<\/ul>\n<ol>\n<li>Skala potatisen och koka den i l\u00e4ttsaltat vatten. Lugnt och fint, inget stormkok. Kolla med j\u00e4mna mellanrum s\u00e5 att den inte kokar s\u00f6nder.<\/li>\n<li>V\u00e4rm gr\u00e4dde och mj\u00f6lk. H\u00e4ll av potatisen. Sp\u00e4d med gr\u00e4ddmj\u00f6lken samtidigt som du vispar med elvisp. N\u00e4r moset \u00e4r lent ska sm\u00f6ret i. Forts\u00e4tt vispa helt kort tills det sm\u00e4lt.<\/li>\n<li>R\u00f6r i osten och h\u00e4lften av citroncesten. Smaka av med citronsaft, salt och peppar.<\/li>\n<li>Str\u00f6 resten av cesten ovanp\u00e5 tillsammans med gr\u00e4sl\u00f6k och sm\u00f6rg\u00e5skrasse.<\/li>\n<\/ol>\n<p>Vinterpotatis har m\u00e5nga smakkamrater och vill du testa en lite tuffare variant s\u00e5 finns ett stomp med senap och pepparrot<a href=\"https:\/\/blogg.land.se\/skog-till-bord\/potatisstomp\/\"> vid l\u00e4nken h\u00e4r<\/a>.
