L\u00e5ngv\u00e4ga simmare och delikatess. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Ni f\u00e5r inte missa den. En l\u00e5ngv\u00e4ga r\u00e5vara, men resan st\u00e5r den sj\u00e4lv f\u00f6r. Varje \u00e5r kommer enorma stim fr\u00e5n Barents hav upp till Lofoten d\u00e4r f\u00e5ngsten drar ig\u00e5ng. Ingen fara f\u00f6r det h\u00e4r \u00e4r v\u00e4rldens st\u00f6rsta fiskbest\u00e5nd och 90 procent av stimmen v\u00e4nder tillbaka till ishavet efter leken.<\/p>\n<p>Fisket h\u00e5ller p\u00e5 fr\u00e5n januari till april, sen \u00e4r det stopp. Skreien har gr\u00f6nt ljus i WWFs fiskguide och dessutom \u00e4r skreifisket MSC-certifierat. Det h\u00e4r \u00e4r fisken f\u00f6r ett gott samvete och definitivt f\u00f6r en god m\u00e5ltid.<\/p>\n<p>Tipset f\u00f6r att lyckas \u00e4r att l\u00e4ttrimma fil\u00e9erna och att ha koll p\u00e5 innertemperaturen. Det sista \u00e4r lite subjektivt f\u00f6r vissa gillar fisk som har en glasig k\u00e4rna medan andra vill ha den som jag helt igenom tillagad utan att den blir torr. Spannet ligger mellan 48 \u2013 54 grader och jag l\u00e4gger mig p\u00e5 52.<\/p>\n<p>En rimlag och 60 minuter ger vit torsken en j\u00e4mn s\u00e4lta med n\u00e5got fastare k\u00f6tt som delar sig i flak efter tillagning. Processen \u00e4r snabb och det r\u00e4cker att l\u00e4gga fiskfil\u00e9n n\u00e5gon timma i en lag gjord p\u00e5 \u00bd dl salt per liter vatten. Tills\u00e4tt eventuellt \u00bd msk socker f\u00f6r en rundare smak och f\u00f6r att f\u00e5 till en l\u00e4tt karamellisering p\u00e5 ytan om fil\u00e9n ska stekas.<\/p>\n<p>Dags att laga mat och idag blir det l\u00e4ttrimmad, pocherad torsk.<\/p>\n<h2>L\u00e4ttrimmad ishavstorsk med spenatkr\u00e4m<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>800 g torskrygg i fyra bitar<\/li>\n<li>1 l vatten<\/li>\n<li>\u00bd &#8211; \u00be dl salt<\/li>\n<\/ul>\n<h4><strong>spenatkr\u00e4m<\/strong><\/h4>\n<ul>\n<li>1 schalottenl\u00f6k<\/li>\n<li>1 vitl\u00f6ksklyfta<\/li>\n<li>200 g f\u00e4rsk spenat<\/li>\n<li>1 dl cr\u00e8me fraiche<\/li>\n<li>1 msk sm\u00f6r<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<h4><strong>tillbeh\u00f6r<\/strong><\/h4>\n<ul>\n<li>r\u00f6kt fl\u00e4sk<\/li>\n<li>f\u00e4rsk pepparrot<\/li>\n<li>1 knippa gr\u00e4sl\u00f6k<\/li>\n<li>n\u00e5gra stj\u00e4lkar dill<\/li>\n<li>1 knippa sparris<\/li>\n<\/ul>\n<ol>\n<li><strong>\u00a0<\/strong>R\u00f6r ihop vatten och salt. L\u00e4gg i torskbitarna och se till att rimlagen t\u00e4cker helt. L\u00e5t ligga 1 timma.<\/li>\n<li>Skala och hacka l\u00f6k och vitl\u00f6k. Hetta upp en klick sm\u00f6r i en kastrull och fr\u00e4s l\u00f6ken f\u00f6rsiktigt. Den ska inte ta f\u00e4rg. L\u00e4gg i spenaten som strax sjunker ihop. Koka bort v\u00e4tskan som bildas.<\/li>\n<li>Klicka i cr\u00e8me fraiche och sm\u00f6r. Mixa kr\u00e4men helt sl\u00e4t. Smaka av med salt och peppar.<\/li>\n<li>T\u00e4rna fl\u00e4sket i fint. Stek det sedan knaprigt i panna. Riv pepparroten. Sk\u00e4r gr\u00e4sl\u00f6ken i tunna ringar och plocka vippor fr\u00e5n dillen.<\/li>\n<li>Koka upp saltat vatten, l\u00e4gg i sparrisen och l\u00e5t den koka n\u00e5gra minuter. H\u00e4ll av.<\/li>\n<li>Koka upp en rej\u00e4l kastrull med l\u00e4ttsaltat vatten. L\u00e4gg i torskbitarna och dra kastrullen fr\u00e5n v\u00e4rmen. L\u00e5t st\u00e5 tills torsken har en innertemperatur p\u00e5 52 grader. R\u00e4kna med att det tar cirka 4 minuter.<\/li>\n<li>L\u00e4gg upp spenatkr\u00e4men p\u00e5 tallrikar. L\u00e4gg p\u00e5 den precis nykokta torsken som toppas med en driva pepparrot, knapriga fl\u00e4skt\u00e4rningar, gr\u00e4sl\u00f6k och dill.
