Alla sorter. Och alldeles speciellt den lite sp\u00e4dare spetsk\u00e5len. R\u00f6d eller vit, b\u00e5da har en s\u00e4rskild st\u00e4llning i mitt k\u00e5lhj\u00e4rta. Idag handlar det om den vita.<\/p>\n<p>Den som k\u00e4nner huvudk\u00e5lens natur vet att n\u00e5got h\u00e4nder n\u00e4r de hamnar i stekpannan. En l\u00e4tt brynt yta plockar fram det allra b\u00e4sta. Kokt f\u00f6rlorar den smak och ist\u00e4llet framtr\u00e4der en lite unken svavelton jag vill undvika.<\/p>\n<p>Stuvad k\u00e5l ska vara mjuk, men den f\u00e5r inte f\u00f6rlora sin fr\u00e4sch\u00f6r. S\u00e4rskilt inte spetsk\u00e5len som har sp\u00e4da n\u00e4stan salladslika blad. Snabbt ska det g\u00e5. Jag finstrimlar inte, knivarbetet f\u00e5r v\u00e4nta tills de ligger p\u00e5 tallriken. Och s\u00e5h\u00e4r g\u00e5r det till.<\/p>\n<h2>Oststuvad spetsk\u00e5l<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>1 litet huvud spetsk\u00e5l<\/li>\n<li>1 \u00bd &#8211; 2 dl gr\u00e4dde<\/li>\n<li>1 dl riven, lagrad ost<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<li>eventuellt fint hackad persilja<\/li>\n<\/ul>\n<ol>\n<li>Sk\u00e4r spetsk\u00e5len i klyftor. Salta och stek i olja till fin f\u00e4rg. H\u00e4ll p\u00e5 gr\u00e4dden och l\u00e5t k\u00e5len sm\u00e5puttra tills gr\u00e4dden tjocknar n\u00e5got. R\u00f6r i osten och smaka av med salt och peppar. St\u00f6 eventuellt \u00f6ver en liten n\u00e4ve finhackad persilja.<\/li>\n<li>Servera med stekt korv, eller med f\u00e4rsbiffar och lingonsylt, eller som del av en vegetarisk m\u00e5ltid.<\/li>\n<\/ol>\n<p>Det \u00e4r en sanning med modifikation att spetsk\u00e5l alltid \u00e4r b\u00e4st efter kort tillagning och ett av undantagen \u00e4r <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/kalpudding-trostande-trygg-husman\/\">k\u00e5lpudding, mitt recept hittar du h\u00e4r<\/a>.
