Grillat eller stekt, i rimliga m\u00e4ngder och med v\u00e4l valt s\u00e4llskap. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Jag \u00e4r en all\u00e4tare. Och k\u00f6tt har definitivt en plats bland favoriterna. Men det poppar genast upp en k\u00e4nsla som s\u00e4ger att jag borde f\u00f6rsvara mig. Eller f\u00f6rklara. I samma andetag som jag bek\u00e4nt mig till k\u00f6tt\u00e4tarna infogar jag n\u00e5got om: ekologiskt, sm\u00e5 m\u00e4ngder, naturbetat, vilt, h\u00f6gst en g\u00e5ng i veckan, ansvar\u2026.<\/p>\n<p>Allt \u00e4r alldeles sant, men ocks\u00e5 ett f\u00f6rsvarstal. Idag struntar jag i det d\u00e4r och hyllar den v\u00e4l tillagade k\u00f6ttbiten. F\u00f6r att det \u00e4r s\u00e5 f\u00f6rbaskat gott helt enkelt. Essensen av grundsmaken umami!<\/p>\n<h2>Smaken av k\u00f6tt \u2013 3 ov\u00e4rderliga knep<\/h2>\n<ol>\n<li>F\u00f6r det f\u00f6rsta: Bryn eller grilla k\u00f6ttytan till perfektion. Riktigt fin yta \u00e4r den b\u00e4sta kryddan. I \u00f6vrigt beh\u00f6vs bara salt och peppar.<\/li>\n<li>F\u00f6r det andra: Var noga med innertemperaturen. 57 \u2013 58 grader \u00e4r medium. K\u00f6ttet \u00e4r saftigt och rosa. Checka med spetsen av en termometer mitt i bitens tjockaste del. Och allra b\u00e4st \u00e4r det s\u00e5klart att tillaga j\u00e4mntjocka bitar.<\/li>\n<li>F\u00f6r det tredje: L\u00e5t alltid k\u00f6ttet vila innan det sk\u00e4rs upp. 10 minuter \u00e4r ett bra m\u00e5tt f\u00f6r mindre bitar. St\u00f6rre kan g\u00e4rna ligga l\u00e4ngre.<\/li>\n<\/ol>\n<p>Och s\u00e5 blir det recept. <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/oxfilemacka-med-fredagsfeelng\/\">F\u00f6rst ett tips om en sm\u00f6rstekt macka med stekt eller grillad biff<\/a>. N\u00f6tk\u00f6tt eller vilt funkar fint. \u00a0Till den en majonn\u00e4s med smak av karljohansvamp, picklade ramsl\u00f6ksknoppar och ett knaprigt baconstr\u00f6ssel. Allts\u00e5 magiskt gott!<\/p>\n<p><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/pasklamm-i-gott-sallskap\/\">Mitt andra f\u00f6rslag \u00e4r en sallad med tunna skivor lammytterfil\u00e9<\/a>, rostade r\u00f6dbetor och brynt l\u00f6k. Dessutom ett brynt \u00f6rt- och vitl\u00f6kssm\u00f6r med frasiga br\u00f6dsmulor och en getostkr\u00e4m. Oemotst\u00e5ndligt!<\/p>\n<p>N\u00e5got att satsa p\u00e5 till helgen kanske? Allt gott!
