En sopptallrik som bjuder in v\u00e5rens f\u00f6rsta prim\u00f6r, br\u00e4nn\u00e4sslan, att samsas med sina b\u00e4sta smakkamrater. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>\u00c4ta n\u00e4sslor?! Ja, alla vet att man kan, men varf\u00f6r? F\u00f6r att det \u00e4r den genuina smaken av tidig v\u00e5r. F\u00f6r att k\u00e4nslan av den allra f\u00f6rsta sk\u00f6rden \u00e4r magisk. Men mest f\u00f6r att det \u00e4r s\u00e5 gott.<\/p>\n<p>N\u00e4sslor har en tydlig smak av mineral. Och gr\u00e4s. Och de ska f\u00e5 ta plats, men i r\u00e4tt s\u00e4llskap. Jag \u00e4ter aldrig mat d\u00e4r smakerna m\u00e5ste d\u00e4mpas, d\u00e4remot \u00e4r jag noga med kombinationerna.<\/p>\n<p>Allt i tallriken ska ha en egen roll och samtidigt samarbeta. Till n\u00e4sslor s\u00e4ger jag \u00e4gg. De g\u00f6r ett fantastiskt smakarbete ihop. Dessutom gr\u00e4sl\u00f6k som passande nog sticker upp samtidigt som n\u00e4sslorna i ett annars tomt tr\u00e4dg\u00e5rdsland. Och s\u00e5 har vi f\u00e4nk\u00e5l. Den milt lakritstonade br\u00f6dkryddan.<\/p>\n<p>N\u00e5got med trivsam, mustig s\u00e4lta \u00e4r ocks\u00e5 fint till n\u00e4sslor. Ofta k\u00f6r jag p\u00e5 n\u00e5got lite r\u00f6kt, bacon eller r\u00f6kt lax, som f\u00f6r \u00f6vrigt kan serveras p\u00e5 en kn\u00e4ckemacka vid sopptallrikens sida. Men idag g\u00e5r jag p\u00e5 ett annat sp\u00e5r. Jag skivar f\u00e4nk\u00e5lskryddad salscciakorv i soppan och japp, det blev en riktig smakfest.<\/p>\n<p>Inga konstigheter med tillagningen, men s\u00e5klart ska \u00e4gget kokas exakt 6 minuter efter f\u00f6rsta bubblan visar sig i kastrullen. N\u00e4sslorna ska mixas riktigt fint och gr\u00e4sl\u00f6ken sk\u00e4ras i tunna, tunna ringar med en skarp kniv. Sm\u00e5saker, men de g\u00f6r verkligen skillnad.<\/p>\n<p>Ett par ord ocks\u00e5 om sj\u00e4lva sk\u00f6rden. Handskar p\u00e5. Utan skydd kommer fingertopparna g\u00f6ra sig p\u00e5minda resten av dagen. Plocka de finaste gr\u00f6nlila n\u00e4sseltopparna och sk\u00f6lj noga. L\u00e4ngre och mer \u00e4n du tror. Inga sandkorn i soppan!<\/p>\n<p>I \u00e5r l\u00e4gger jag till en potatis till receptet. Den ger inte mycket smak, men bidrar med struktur som ger en fin konsistens.<\/p>\n<p>Och nu blir det mat!<\/p>\n<h2>N\u00e4sselsoppa med salsiccia och \u00e4gg<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>4 \u00e4gg<\/li>\n<li>2 f\u00e4nk\u00e5lskryddade salcicciakorvar<\/li>\n<li>1 l nyplockade n\u00e4sslor, blanda eventuellt med f\u00e4rsk spenat<\/li>\n<li>1 medelstor potatis<\/li>\n<li>1 gul l\u00f6k<\/li>\n<li>5 &#8211; 6 dl gr\u00f6nsaksbuljong<\/li>\n<li>1 dl cr\u00e8mefraiche eller gr\u00e4dde<\/li>\n<li>salt<\/li>\n<li>peppar<\/li>\n<li>eventuellt lite krossat f\u00e4nk\u00e5lsfr\u00f6<\/li>\n<li>f\u00e4rsk gr\u00e4sl\u00f6k<\/li>\n<\/ul>\n<ol>\n<li>Koka \u00e4ggen och stek korvarna.<\/li>\n<li>Sk\u00f6lj n\u00e4sslorna mycket noga och plocka bort fjol\u00e5rsgr\u00e4s och sm\u00e5skr\u00e4p som alltid f\u00f6ljer med.<\/li>\n<li>Skala och t\u00e4rna potatisen. Skala och skiva l\u00f6ken. Stek potatis och l\u00f6k i en tjockbottnad kastrull. H\u00e5ll ner v\u00e4rmen, det ska inte brynas h\u00e5rt. H\u00e4ll p\u00e5 drygt h\u00e4lften av buljongen och l\u00e5t sm\u00e5puttra tills potatisen \u00e4r mjuk.<\/li>\n<li>Under tiden kokar du upp l\u00e4tt saltat vatten i en kastrull och f\u00f6rv\u00e4ller n\u00e4sslorna n\u00e5gon minut. Sk\u00f6lj genast i kallt vatten s\u00e5 beh\u00e5ller de sin fina f\u00e4rg.<\/li>\n<li>R\u00f6r ner cr\u00e8mefraichen i potatiskoket och l\u00e4gg i n\u00e4sslorna. Koka upp och mixa sedan genast till en sl\u00e4t soppa. Sp\u00e4d med buljong tills du \u00e4r n\u00f6jd med konsistensen. Smaka av med salt och peppar. Korven tillf\u00f6r f\u00e4nk\u00e5lssmak, men jag str\u00f6dde i lite extra krossade f\u00e4nk\u00e5lsfr\u00f6n.<\/li>\n<li>Servera soppan varm med \u00e4gghalvor, skivad korv och fint skuren gr\u00e4sl\u00f6k.<\/li>\n<\/ol>\n<p>Ett riktigt v\u00e5rdagsprojekt.
