Pocherat \u00e4gg, r\u00f6kt fl\u00e4sk, vin\u00e4grett och sm\u00f6rstekt br\u00f6d. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Det enkla, t\u00e4nk att man alltid kommer tillbaka dit. Tallriken med ingredienser som var f\u00f6r sig \u00e4r en sorts \u201dbara\u201d, men som tillsammans g\u00f6r en alldeles underbar m\u00e5ltid. Och smakerna! Rena och samspelta.<\/p>\n<p>Beska \u00e4r en av grundsmakerna. Den m\u00e5nga k\u00e4nner tvekan inf\u00f6r. Det s\u00e4gs att det \u00e4r en primitiv reaktion. Urhj\u00e4rnan varnar, men jag vet inte. Det s\u00e4gs ocks\u00e5 att vi \u00e4r olika k\u00e4nsliga, att vissa reagerar starkare p\u00e5 bittra toner. M\u00f6jligen, men jag \u00e4r f\u00f6r.<\/p>\n<p>Kanske kan vi l\u00e4ra? Ta kaffe som exempel. Det kr\u00e4ver lite exercise innan det accepteras sen kan de flesta inte vara utan. Men nu handlar det om beska i sallat, det finns en hel rad sorter att v\u00e4lja p\u00e5 som endive, rosensallat eller fris\u00e9sallat. Det h\u00e4r \u00e4r en \u00f6rt med sp\u00e4nnande, aningen bittra smaktoner.<\/figcaption><\/figure>\n<p>I min version av sallad lyonnaise finns den med, b\u00e5de som blad och outslagna knoppar. Bladen plockar jag riktigt sm\u00e5 och sp\u00e4da, de blir beskare med tiden. Sj\u00e4lvklart kan salladen g\u00f6ras utan maskrosor. Andra aningen bittra blad fungerar precis lika bra, men det \u00e4r lite kul med ogr\u00e4s till middag.<\/p>\n<p>Och nu lagar vi mat.<\/p>\n<h2>Sallad Lyonnaise<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>4 pocherade \u00e4gg, recept vid l\u00e4nk nedan<\/li>\n<li>4 skivor riktigt gott surdegsbr\u00f6d<\/li>\n<li>100 g r\u00f6kt fl\u00e4sk i bit, eller bacon<\/li>\n<li>1 n\u00e4ve valn\u00f6tsk\u00e4rnor<\/li>\n<li>1 n\u00e4ve outslagna maskrosknoppar<\/li>\n<li>sallatsblad, blandade sorter och g\u00e4rna n\u00e5gon med bittra toner exempelvis maskrosblad<\/li>\n<li>2 utslagna maskrosblommor<\/li>\n<\/ul>\n<h4>Vin\u00e4grett<\/h4>\n<ul>\n<li>2 msk r\u00f6dvinsvin\u00e4ger<\/li>\n<li>1 tsk dijonsenap<\/li>\n<li>\u00be dl olivolja<\/li>\n<li>salt<\/li>\n<\/ul>\n<ol>\n<li>Sk\u00e4r fyra skivor av br\u00f6det och pensla det med olja. Sk\u00e4r fl\u00e4sk eller bacon i t\u00e4rningar. Hacka valn\u00f6tterna grovt.<\/li>\n<li>F\u00f6rdela sk\u00f6ljda sallatsblad direkt p\u00e5 tallrikarna. Hetta upp en stekpanna och stek br\u00f6det frasigt och gyllenbrunt. L\u00e4gg \u00e5t sidan och stek sedan fl\u00e4skt\u00e4rningarna. Precis innan de \u00e4r f\u00e4rdiga ska valn\u00f6tter och maskrosknopparna i pannan, men bara n\u00e5gra sekunder.<\/li>\n<li>Str\u00f6 fl\u00e4sk, n\u00f6tter och knoppar \u00f6ver sallatsbladen. R\u00f6r ihop ingredienserna till vin\u00e4gretten. Skeda den \u00f6ver tallrikarna och l\u00e4gg p\u00e5 de pocherade \u00e4ggen. Avsluta med att plocka de gula kronbladen fr\u00e5n maskrosorna och str\u00f6 dem \u00f6ver. Servera genast tillsammans med de stekta br\u00f6dskivorna.
